This author thought everyone picking up his cookbook would know what tapas are. I thought they were empanadas (a Spanish turnover made with pastry and fillings). However, they are not empanadas; they are small snacks (offered on small plates). They may be as simple as olives and cheese. The author did not explain tapas; the reader figured it out by looking at the recipes.
Next, the chef writing this did not understand that ANYONE might pick up a copy. There are no explanations of things like: "bravas sauce" and " spice mix" (what spices are in this mix? Both items are mentioned in# 24 - Patatas Bravas). There are also unclear ingredients (in # 30 - Pan-Fried White Beans). Are the two cups of white beans already cooked, are they raw and need to be cooked?
Another problem was the lack of photos of finished products. There were some finished product photos, but not enough. For example, recipe # 8 STUFFED CHERRY PEPPERS only shows an image of whipped creamed cheese.
Where does one get PADRON PEPPERS (recipe # 4)? Is there a substitute? In recipe # 12 - MIGAS - what is pico salad? The author needs to explain unusual items. Where is the recipe for the pico salad (is it pico de gallo sauce?).
On the positive side, # 16 - MUSHROOM CROQUETTES is a fascinating recipe. There is a photo of the finished product, and the ingredients are listed. I can hardly wait to try this one.
There is no nutritional information. My suggestion is that this chef needs a proofreader to read this cookbook and point out the glaring omissions. (Rated three stars at this point.)
UPDATE AFTER TRYING RECIPES: Forget these recipes. I dumped this cookbook as soon as I tried the Mushroom Croquettes and a couple of others. Either the author left out critical ingredients (the Mushroom Croquettes never formed into a cohesive unit {so each croquette could be fried and stay whole}) or the instructions left out something because these were a disaster. I have no problem following cookbook instructions. I've been cooking from cookbooks for many years, but these were tasteless garbage. I can certainly understand why the "chef" didn't give his last name.

Hmmmm....when I cook, I like to know what I'm cooking. Most of the pictures in this book were of the ingredients and not the finished product....used a bunch of words that I had no idea what they were or where to get them...very disappointing book.
