Dinner pies are very far from my italian upbringing
this book gave me tips and ideas to move the taste of my family to another lever
not all applicable to my south european taste but i will give some of them a try

I have been craving a cookbook on this topic, so much so that I requested an ARC of this one even though it's written for omnivores and I am a vegan. Unfortunately the number of recipes here that are vegan or easily veganizable is limited. However, this is a cookbook I would definitely purchase if I were an omnivore and might purchase even if I was vegetarian.

After an introduction, sections on tools and ingredients, plus one on working with dough (I really appreciated the tips in this one, such as easing up on the rolling pin pressure when approaching the edges), the book is divided into six chapters: "Pie Doughs and Pastries," "Savory Hand Pies & Turnovers," "Pot Pies," "Shepherd's Pies & A Meat Pie Miscellany," "Little Pies, Tarts & Galettes," "Quiches & their Cousins," and "Cobblers, Strudels & Other Wrapped Entrees."

"Pie Doughs and Pastries" covers a handful of basic doughs (Go-To Pie Dough, Whole Wheat Pie Dough, Cornmeal Pie Dough, Tart Pastry) and several more unusual ones (Yeasted Butter Pastry, Cheddar Cheese Pastry, Cornmeal Biscuit Crust, Tender Buttermilk Biscuit Crust, Pumpkin Sage Biscuit Crust, Samosa Dough, Flaky and Sturdy Hand Pie Pastry). Most interesting to me here was a brief aside where the author mentions that the Cheddar Cheese Pastry is excellent for apple pies. Who knew? But the combination sounds delicious. There are also tips titled "Recipe for Success" near the end of each recipe in this section.

"Savory Hand Pies, Turnovers & Pizzas" includes a number of intriguing recipes. Too many to list, but a few that made me wish I could eat them include Tuscan Style Pork Turnovers (made with pitted olives, sun-dried tomatoes, fresh (dried can be substituted) basil, rosemary and thyme, and feta cheese), Mini Mushroom & Goat Cheese Turnovers, and Eggplant Parmesan Pizza Tart.

The chapter on pot pies has a lot of classics (Vegetable Pot Pie, Chicken Pot Pie with Winter Vegetables, Classic Beef Pot Pie) and some more unusual ones like Old Bay Seafood Pot Pie, Sausage & Guiness Pot Pie, Moroccan Lamb Pie, and most intriguing to me, a Taco Pot Pie (with onions, peppers, ground beef and pork, salsa, pinto beans, cheeses, ranch dressing, and seasonings like chili powder, cumin, smoked paprika and coriander) which is one of the author's favorite Super Bowl dishes and can be made in muffin cups.

"Shepherd's Pies & A Meat Pie Miscellany" has a Tex-Mex Chicken Tortilla Pie, an Italian Sausage & Chicken Skillet Pie, a riff on Tourtiere, Aussie Meat Pies and a few others in addition to (of course) a couple of shepherds pies. It's a shorter chapter and obviously, meat centered.

"Little Pies, Tarts & Galettes" had some that looked really good, such as Little Roasted Tomato Tarts, Fresh Tomato and Pesto Galette, Creamy Red Potato and Parmesan Tart, Curried Winter Squash Galette with Onion and Apple (unfortunately for me, it has Brie but I'm sure many vegetarians and omnivores will be happy with it), and Free-Form French Onion Tart. For the omnivores here, there are also such recipes as Bacon & Tomato Mini Tarts, Mini Hot Crab Tarts, Pepperoni Pizza Bites and Collards Tarte Au Gratin (it uses bacon).

"Quiches & Their Cousins" contains many vegetarian-friendly recipes, such as Artichoke Heart, Onion & Sun-Dried Tomato Quiche, Fresh Corn, Tomato, & Green Olive Quiche, Fresh Corn Pudding Pie, Greek Cauliflower & Spinach Quiche. For omnivores, there are Spinach & Sausage Quiche, Quiche Scampi, Salmon, Smoked Cheddar & Dill Quiche, a number of quiches that contain bacon, and Italian Sausage & Spinach Polenta Pie, among others. This was the least interesting section for me because even though there is such a thing as vegan quiche (not in this cookbook, but I could get some ideas for making them from here) I am not a fan of it.

"Cobblers, Strudels & Other Wrapped Entries" has only two options for vegetarians--Roasted Vegetable Strudel and Kale Spanakopita--but several recipes strictly for omnivores (Salmon Spinach Pastry Packets, Old-Fashioned Chicken & Biscuits, Fresh Tomato & Ham Cobbler, Meatloaf Wellington, and others).

The book ends with a section on measurement equivalents and an index.

Overall this cookbook is not for me because I am vegan but that doesn't mean others wouldn't benefit from it. The recipes seem approachable once you get past having to make pie crust (and you knew you'd have to with a book on pies), and there are enough classic recipes and creative recipes to satisfy both kinds of finicky palates.

Over my Christmas Break, I watched The Great British Baking Show and one of the competitions focused on savory pies. Everything looked so good that I quickly went to Pinterest to find some great ideas to try.

But there wasn't much beyond a Shepard's Pie or Chicken Pot Pie.

Coming to the rescue is Savory Dinner Pies by Ken Haedrich! So many great ideas and recipes to try.

The book begins with several crusts that appear to be fairly easy to make.

The actual recipes recommend a specific crust but I think if you are a bit creative, you could probably use any of these crusts with the recipes by making some small adjustments.

There are so many of these savory pies that I want to try. The vegetarian options had me salivating!

If you are looking for recipes to encompass protein, carbs and veggies all in one, this is a great cookbook option to consider.

Just the title of this book made my mouth water! I was impressed with all the new and unique ways to prepare savory hand pies, quiche, shepherds pie, pot pies, cobblers and strudels. I was a little frustrated that there wasn’t a big beautiful photo for each recipe but I was inspired to try some of these interesting recipes.

Time to get cooking!

"Savory Dinner Pies" by Ken Haedrich is a beautiful cookbook with over 80 recipes. Ken shows the reader how to make exquisite one dish dinners. Pies on the family dinner table is becoming a lost art. We live in a world of "grab and go" food with frozen entrees, but have you ever made homemade pie for your family? Ken demonstrates strategies on picking the right cooking tools, techniques and tricks of the trade for making easy meals. These pies are perfect for family gatherings, work luncheons, even "to go" snack tarts.

This book not only features pie dough recipes, it is filled with pastries, empanadas, pot pies, family meat pies, turn overs, pizza, quiche, tarts, strudels, and cobblers.

My mom was a an extraordinary pie cook. Not only were her pies delicious, they looked gorgeous. She was a master at creating family togetherness. Her main ingredient was love. Try as I may I have not been able to replicate her pies. This book brings back great memories and inspires me to try pie baking again. I can't wait to buy my copy when it's published on January 18, 2022.

I love a pie for dinner, so this book certainly appeal to me to review when I saw it on Netgalley.

The book is divided into 7 main chapters (no of recipes) plus an introduction
- Pie dough & pastries (12)
- Hand pies, turnovers, and pizzas (14)
- little pies, tarts and galettes (17)
- quiches and their cousins (18)
- pot pies (15)
- shepherd's pies & meat pie miscellany (8)
- Cobblers, Strudels & other wrapped entrees (8)

The Introduction provides details on the tools required, a guide to ingredients, pie doughs, and baking strategies.

First things first, the measurements are in imperials terms, though there is a conversion chart at the back of the book, though only has cups to liquid not weight (such as the flour). There is a lack of colour photographs with each recipe - I do like a picture with my recipes so I know how it should turn out!

Each recipe begins with an introduction, then lists the base pie dough that is required from the first chapter and goes on to include the ingredients to make up the main recipe. Each recipe has easy-to-follow steps and provides details on the number of portions. Some of the ingredient terms are American, such as zucchini and heavy cream. Each recipe also has a box called 'Recipe for Success' where the author gives their tips and some recipes also come with additional help such as how to roast tomatoes or to shave an ear of corn.

There are plenty of pies to choose from for your dinners, the sauce and Guinness pie sounds interesting, along with the Moroccan lamb pie.

Over all this is a good book, easy to follow but lack pictures.

I received a free electronic review copy of this title from the publisher via Edelweiss+. With cookbooks in particular, if I like the electronic ARC, I make a point of buying a physical copy of the book when it comes out. Kan Haedrich's Savory Dinner Pies is being released on January 18—and I'm preordering it from my local independent bookseller. This is a title I want to put to use immediately!

Haedrich knows his pies and has a wonderful sense of humor. Normally, I would be skipping the opining chapters on things like types of pie pans and butter vs. shortening, but Haedrich makes these topics a delight. Once you get to the recipes, there are all kinds of variations: pot pies, hand pies, savory tarts, quiches, samosas. Some of the recipes are classics, others are surprising (and delicious-sounding): tomato and ham cobbler; Italian sausage and chicken skillet pie; sloppy joe pot pies with a biscuit crust; taco pot pie; loaded baked potato tart; curried winter squash galette with onion and apple.

I am in total agreement with the philosophy Haedrich explains in the Author's Note: "I am hopelessly addicted to crust. I've been this way for decades. In fact, I can scarcely remember eating a meal that could not have been improved by putting some sort of crust over, under, or around it.... Don't even get me started on crustless quiche, a notion I find just plain disturbing." If you're a member of or are considering a membership in the Crust-Lovers' Club, you'll want to purchase a copy of Savory Pies—stat!

This cookbook was super cool! I love to bake and I was able to explore a few different options in each section before writing my review. My favorite had to be the shepherd's pie! It was amazing and the crust was the right amount of flaky with the delicious flavors bursting inside! Altogether it was a great recipe. The only critique I would say is the lack of pictures. Many modern cookbooks have moved onto this more picture-oriented style because after all, a picture is worth a thousand words. I found the lack of pictures stunting how much I wanted to open this book and explore other recipes when I didn't know how it was supposed to look in the process.
Overall I would recommend this book if you can power through the lack of pictures and use your imagination!

Savory Dinner Pies is a well written and appealing collection of one-dish savory pies by Ken Haedrich. Released 18th Jan 2022 by Quarto on their Harvard Common Press imprint, it's a comprehensive 224 pages and is available in paperback and ebook formats.

I loved this book's layout and the spare well written no-nonsense text. The author is *very* competent, he knows what he's doing, and he is generous enough to want to share that experience with the world. The entire book felt to me like a worthwhile and rewarding masterclass. The introduction contains the nuts and bolts of techniques, equipment, and ingredients. Whilst the author presupposes no previous knowledge on the reader's part, it will be useful to know one's way around a kitchen. (But if not, don't despair, a keen beginner could follow the recipes here and achieve good results).

The following chapters contain the recipes, arranged roughly thematically: pie doughs & pastries, hand pies turnovers & pizza, little pies tarts & galettes, quiches & their cousins, pot pies (MUCH love to this chapter), shepherd's pie & other meat pies, and cobblers streudels & wrapped entrees. The recipes are inspired by world cuisine and their origins are delicious and diverse.

The recipes have their ingredients listed bullet style in a sidebar. Measurements are given in US standard only; there's an abbreviated conversion chart in the back of the book. Special tools and ingredients are also listed, along with yields and cooking directions. Most of the ingredients are easily sourced at any moderately well stocked grocery store. Special dietary needs recipes are blended in without specific commentary (there aren't a lot of vegan friendly recipes included, for example). Nutritional information is not included.

It's beautifully illustrated throughout with color photos. Serving suggestions are attractive and appetizing. I'm a visual learner, especially with cooking, and having the photos really helped me. The food styling is very well done.

Five stars. It is, admittedly, a niche cookbook, but the recipes are so varied and so tasty that this would be a great choice for library acquisition, or for "everyday" cooks looking for some variation on meat & potatoes.

One of the best things about Ken Haedrich is that he is passionate about his subjects, and transfers this passion to his excellent cookbooks. Savory Dinner Pies: More than 80 Delicious Recipes from Around the World is no exception. This cookbook makes readers want to drop everything and bake a pie. Dinner pies are substantial and filling, so with this book, dinner can often be pie and salad. Yum!

The recipes are written in the traditional manner, and are easy-to-follow. They are succinct and give step-by-step instructions to insure perfect, picture-perfect results. The cookbook features beautiful photographs of most of the pies, and they are mouthwatering. There is an excellent chapter on Tools of the Trade where Haedrich shows and explains what pans can be used for pies. He includes several recipes for different crusts, and gives advice on how to make them perfectly. Haedrich shows hand pies, turnovers, pizzas, whole dinner pies, sandwich size pies, mini tarts, galettes, and quiches.

Anyone who doesn’t know how to make a pie can learn from this cookbook. There is something here for everyone’s taste, including vegetarian, meat, fish, poultry, and pies using leftovers. Pie lovers will use this cookbook often to create mouthwatering pies that will make dinner exciting. This cookbook is highly recommended and makes a great addition to a cookbook collection. It’s fun to read and fun to cook from. Haedrich has done it again.

Fascinating cookbook providing a large variety of crusts from go to crust, savory as well as sweet. The large range will definitely provide options to go to for your next dinner party. The book then explores hand pies and pizzas, each culture has their own variety of hand pies this cookbook takes you on a mini world tour of flavors and cultures. Pizza's explores breakfast to vegetarian. Tarts, tarte tatin to galletes there is something for everyone with these developed recipes with beautiful photographs. Quiches and cousins takes the reader to other wonderful flavors mixed together in a delightful variety to expand your cooking repertoire. This leads into Potpies that explores way beyond a typical pot pie and takes to the sea. The seafood pies are just some of the ones represented it takes Thanksgiving leftovers to a different level as well as beef, beer, meatballs as well as lamb have their own crust to bake. The cookbook rounds out the chapters with everything from cobbler, strudel and chicken with biscuits. This cookbook will be your go to dinner manual for recreating favorites to discovering new flavors. Definitely want to check this one out!

A delightful cookbook full of recipes that will quickly become “comfort food” when you need it.

There were so many good recipes, I had a hard time narrowing one down to try for this review. I eventually chose Mini Hot Crab Tarts. The recipe was easy to follow. A bit time intensive as you have to chill the dough for a while, and once the tartlets are made, you have to chill them again. Having said that, the hot crab mix was quick and easy to make. They baked up beautifully, and were absolutely delicious.

When Ken Haedrich spoke of adding delicious crusts to his meals, I was curious. Then I read his intro and was hooked. Here is a man after my own stomach! He provides a thorough background, including his tips and tricks, to producing great crusts. There are many versions provided with insights on how to have them turn out perfect. The recipes are creations that I would never have thought of on my own, but upon seeing and reading them all, I cannot wait to start copying these meals for my own table. The classics are present in addition to so many new ideas. All of the directions are straightforward and easy to follow. The photos provided are helpful, particularly as you are working with crusts, which can be managed in so many ways. The book is laden with experience and insights. An excellent addition to any kitchen for someone who appreciates a delicious savory dinner pie.

If you like pie crusts on top of, underneath or wrapped around your foodstuff, then you will appreciate this cookbook chock full of recipes for pot pies, quiches and hand pies. In it you will find good information on how to make the dough for the crusts.

The book provides several master pie dough and pastry recipes in the first chapter that are then referenced in the subsequent recipes. I noted a good number of these recipes involved potatoes, which is not a bad thing since potatoes are delicious in pretty much any form.

Recipes, especially the ones for the pie crusts and pastry doughs, are well written and very detailed (e.g., you are told specifically how many pulses and exactly how many seconds the pulse should last when mixing the doughs in a food processor). I really liked the design and layout of the book but wish there had been more color photos of the finished dishes, the ratio of pictures to recipes was surprisingly low and unexpected. Had there been more photos, I'd have given 4 stars instead of 3.

This cookbook brings attention and a lot of helpful detail to the topic of savory pies - the author has an engaging and humorous writing style, and writes: "I am hopelessly addicted to crust." I can wholeheartedly second this, what's not to like! The book starts with an introduction to equipment and materials. Normally, I would skip over this, but I found this well-done. However, I wish he had given some information on the differences between pies, tartes, galettes, cobblers etc. to round out the informational part of the text. The recipes were diverse and interesting, with old favorites and intriguing new ideas sharing space. I loved the emphasis on cooking fresh, as I try to avoid use of processed products. However, the book is very US-centric, which is a pity for those of us outside the US.

What a fun Cookbook! Who does not love savory pies - pot pies, quiche, pizza, meat pies, Everything is better with pie crust under it, over it or both. Great comfort food. Pizza ad quiche are included in this cookbook. Yum!

The cookbook includes information on recommended tools for the recipes in this book. The recipes start off with recipes for a number of different crusts. I really liked the information at the end of each crust recipe called Recipe for Success. This gives you detailed information about each crust and why some of the ingredients are included like vinegar.

The book has a table of contents, so that you can find what you want to make quickly. I also like the way the chapters are broken up telling you what is included in that chapter.

I was not sure how this cookbook would work for me since I am gluten free. But I use really wonderful gluten free flour so the recipes should work fine.

I chose this because my family loves most one dish dinners & I wanted to shake up other dinner time!

When I saw this cookbook in NetGalley, I was immediately drawn to it. My expectations were exceeded! I plan to order a hard copy of this book for my kitchen.

The first part of the book goes into details on how to make pie crusts. And not just one kind of dough. There are several types of dough it goes over. Dinner Pies includes recipes not only for pot pies, but also quiches, pizzas, gazettes, tarts, and more. There is even a tomato and ham cobbler recipe! And each recipe has additional tips and options for success.

My family is going to be super happy I picked the advanced reader copy of this up. The only struggle I had was to quit drooling long enough to write this honest review in exchange for the advanced copy I I was lucky enough to receive!

I knew there were a lot of savory pie recipes that existed but the creativity for some of them were so breathtaking that I had to try some of them for myself. The photographs chosen for the books really did the recipes justice and they look super easy and delicious. This topic and cookbook will be perfect for a future cooking demo and I know the community will spark interest and have fun with it. The classic chicken pot pie and the steak and ale pies are sure to be hits and very enjoyable.

Does what it says on the label - if you're looking for a visual feast in addition to what are some really tasty looking recipes, keep on keeping on. The budget was not spent on excessive food styling. That being said, I very much enjoyed the author's introductions to the recipes (he has a approachable voice), especially as they were short and to the point. You are not going down a blogger's rabbit hole of childhood memories or recent vacations before learning how to make the d**n pie, which I great appreciated. The additional tips for success are a nice touch. A recommend, especially with regard to the pot pie section.

I am a die hard lover of savory pies. I make Shepherd's pie and mini beef pies regularly. I was looking to expand my repertoire when I found Savory Dinner Pies. Beginning with recipes for eleven different crust and clear instructions for each, you are preparing a delicious dinner from scratch that the whole family can help with.

Chapters such as : Handpies, Turnovers and Pizzas ; Little Pies, Tarts, & Galettes ; Quiches and their Cousins ; Pot Pies ; Shepherd's Pies & a Meat Pie Miscellany ; and Cobbler's Strudel's & Other Wrapped Entrees. I can't wait for my garden to produce tomatoes so I can make Tomato Tarte Tatin and Fresh tomato and pesto galette. The Potato and Pea samosas are a hit with my family.

If you love pot pies grab this book and get cooking.

A very informative book of making all sort of savory foods encased in pastry of many types. I love the introduction as it talks about basic things like pie pans, forms, parchment paper, fat ingredients, baking and more From there, there are chapters. on Pie dough and Pastries, Hand pies, turnovers and pizza, Little pies, tarts and Galettes ,Quiches, Pot Pies, Shepard pie and Meat pies and lastly Cobblers, strudels and wrapped entrees.. All beautifully explained and most with full color photos. There really is an abundance of all types of pies for all occasion and for all taste. This is a big book, with lots of recipes, I would have like a photo of each finished pie associated with the recipes printed, but there is enough eye candy here, that it isn't a huge problem.

WHY has this not been a cookbook I could find before?! I love savory pies and it always required 4-5 different cookbooks to find a handful of savory pie recipes. You can find sweet pie cookbooks galore, but FINALLY, a cookbook for the underappreciated pies. I think of savory pies as the new casserole. Savory pies are coming back and having their moment, and this cookbook is the perfect accompaniment to their rising fame.

If you like to cook, want wonderful tasting food, but don't always have the time, GET THIS COOKBOOK. I can't wait to cook more of these recipes. Very accessible and major crowd-pleasers.

Ken Haedrich knows his pastry! In Savory Dinner Pies, he introduces several crust options to wrap around delicious dinner fillings. I haven’t had this book in hand long enough to have tried more than two of the recipes, but the Cornish Pasties in a Flaky and Sturdy Hand Pie Pastry and the Old Bay Seafood Pot Pie (using his Go-To-Pie Dough) will be kitchen keepers at my house.

The recipes are delicious, and the detailed instructions for making flaky pastry are carefully written. I look forward to baking many more of the recipes in this book.

I received a free copy of Savory Dinner Pies from the publisher in exchange for my honest opinion.

Pies, pastries, and quiches. If any of these interest you, then Savory Dinner Pies is the perfect book of for you.

Savory Dinner Pies is split into 7 sections with recipes separated in various different categories. How they decided each seperate category is beyond me, but they do make sense. An entire section is focused on pie doughs and pasties.

The other different sections include Pit Pies, Turnovers, Cobblers, Quiches and numerous more. While all the standard one are included, like Shepard’s Pie, you get some delightful different one that you may have never tried, like the Curried Chicken Pit Pie. Honestly I could just spend so many days just going through every recipe that is on offer in here and not get bored all winter long.

This book feels like a love letter to pies, and you will be better off for reading it.

The delicious recipes that Ken Hadrich, a savory pie expert extraordinaire, has shared in this lovely book will be cherished by my family in the winter months to come.

Excellent not only for home cooks, but for children and teenagers looking to bake and provide a tactile and provisional experience for their families and friends.

From simple pie dough recipes two more elaborate ones and The most incredible pot pie recipes, your mouth will water you flip through the book and imagine these in your belly!

Creative and imaginative recipes fill this book for people who want a more classic dish or a more unique one.

I'm always interested in finding more options for Pi Day (March 14) :) This book has a great collection of different pie and pie-related savory dishes. I was very impressed by the savory "crumble" even. It includes many different pot pies, hand pies, galettes, quiches, and anything else that can be made with pie or biscuit dough and a savory filling. I can't wait to try some of the quiches and pot pies especially. There is a good range of fillings, including vegetables, chicken, turkey and even shrimp. If you're looking for some interesting dinner ideas, this is the book for you.

This one I liked that was very clear in the instructions, i could have used a little more images but not a problem really.

One thing that got my attention was the lots of crusts they are omg I always thought it was you know the only crust one but it was interesting and you have instructions for all of them.

The instructions were very easy to understand and you have a lots of recipes for any occasion you may think of and try lots of new things that was my actual goal with this one.

Ken Haedrich shares his enthusiasm for pie making, along with detailed easy-to-follow directions for several pie crusts. And then, there are the awesome recipes for dinner pies. Everything from meat pies, quiches, tarts, pizzas and more. Beginning and established pie bakers alike will find much to learn and try. It does seem, however, that this Savory Dinner Pies cookbook is an updated, re-edited version of Dinner Pies published in 2015, of which I have a copy.
