Against All Grain: Delectable Paleo Recipes To Eat Well And Feel Great

Rate this book
Having battled an autoimmune disease the modern-medicine way for many years, Danielle Walker took matters into her own hands and set out to regain her health through the medicine of food. After four years of turning her kitchen into a laboratory for revamping her culinary point of view, Danielle mastered the art of grain- and dairy-free cooking—and improved her well-being, virtually eliminating all her ailments.

A self-trained chef, Danielle is the new face of grain-free cooking, tempting foodies of all stripes with her accessible recipes for vibrant Paleo food. Paying homage to the dishes she loved in her pre-Paleo life, she has ingeniously re-created all her favorites without grains or dairy in her first cookbook.

Complementing her innovative recipes with elegant photography, Danielle takes you on a culinary Paleo journey that includes everything from quick breakfasts to sinful desserts, with a long list of hearty entrees in-between. And because Danielle knows she's not the only one with a finicky toddler at home, she has included a special section filled with healthy recipes that kids will be eager to eat and parents will be just as eager to serve.

These recipes are sure to leave you feeling satisfied and exhilarated, rather than discouraged and deprived. Danielle proves that omitting grains, gluten, dairy, and refined sugar doesn't correlate with sacrificing taste; in fact, just the opposite. This book will show you that you can go against the grain in the culinary world and enter a paradise of gourmet foods with exciting flavors.

Let me begin by clarifying that I am not now nor ever will be a proponent of the Paleo diet. In my opinion it is a diet that rather defies logic but as someone who has experienced extreme discomfort from the foods commonly found in most diets I can completely understand and sympathize with the need to do something that will bring relief. I have had to rid my diet of all gluten, dairy, sugar and processed foods which brings me to why I enjoyed this cookbook despite the fact that I bought it as a e-book and I'm not so crazy about the format (not the books fault and at a savings of $30 something I'm happy to live with)

The book offers many recipes for foods that I've had to do without because they've either had gluten, dairy or sugar in them and it's refreshing to find a recipe book where I don't have to omit or modify (too much) recipes due too my sensitivities. She's got some good recipes for basic foods that have had to be avoided due to the fact that they're too high in sugar or are processed. Her recipes for ketchup and barbecue sauce look good and don't even get me started on her recipe for caramel sauce (ooh-la-la!)which are all free of sugar and processed ingredients.

Each recipe has a photo which I appreciate as I find that's an important part of picking what I want to cook (seriously, the photo of the caramel sauce is drool-worthy!)I'm also looking forward to trying her recipe for the nut cheese. All in all, a very good book and recommended to those who are looking for alternative ways to eating that support ridding your diet of sugar and processed foods.

Venturing into a Paleo diet, this happened to be my first cookbook. I enjoy having an actual book to thumb through so I don't always have to hop online and search the blogs. I'm also learning that different Paleo books/blogs vary on what ingredients they use and/or what they allow. I'm focusing on sugar-free, grain-free, and dairy-free more than just "caveman" or "hunter/gatherer", then I hope to add back in raw and grass-fed dairy. One week in and we feel great--more energy, clarity, weight loss, and clearer skin--but we have buyers remorse with the dang cost of all the different high quality ingredients and products. We're hoping it's just the initial upfront cost with collecting all the ingredients to have on-hand.

Anywho, loved this book. We've tried the Paleo waffles, graham crackers, sweet potato fries, and cauliflower rice. All were delicious; especially the waffles! Also, loved Danielle's story of why she HAS to eat this way. Her story, and the many others, is why I believe these kinds of lifestyle diet changes can cause a drastic improvement on one's health, whether it's just improving health or actually preventing disease. I believe a sugar-, grain-, and conventional dairy-free diet, while adding in quality vegetables, grass-fed pastured-raised meats and eggs, and raw or full-fat grass-fed dairy can relieve symptoms from some diseases and can free one of some medications.

What a fantastic cookbook! For those of you looking to move to a more wholesome and healthy lifestyle, this is a great cookbook to help you on your way. I must tell you that I do not eat wheat, gluten, corn, sugar or processed foods as they cause me many issues including weight gain, chronic sinus infections, constant colds, anxiety, depression, chronic fatigue, joint pain, among other things. I do eat some grains, but not often as my husband has gout issues that require him to eliminate all grains from his diet, which happens to be the original reason I picked up this book.

I have tried smoked salmon eggs benedict, celeriac and sausage hash, and the lemon vanilla bean macaroons. All are delicious and will be made again. I am planning to make the blueberry waffles, Korean beef noodles bowl, granny sarella's spaghetti sauce and the world famous sandwich bread in the next couple weeks. The waffles and bread are particularly exciting to me as there are no bad reviews of these recipes on her site and they are very non-traditional being made with nut butter base.

The author of this book was very ill and getting no help from standard medicine. She made her way to a Naturopath, as I did, and was able to get her life back on track by identifying foods that did not agree with her through and elimination diet, which I highly recommend. You can read more of her story here: Danielle Walker's health transformation. You will not be disappointed in this cookbook.

Having switched to a primal/paleo lifestyle in 2012, I’m always looking for cookbooks that sup-port this eating plan. Some have been better than others. Danielle Walker scores high marks for Against all Grain. Not only is this a beautifully photographed work of art, the recipes are delec-table, too. Danielle, who struggled for years with debilitating ulcerative colitis, gives a bit of her background and how her debut book came into being. She covers many topics in a friendly and informative manner in her topic Navigating a New Lifestyle. Here she covers some basics on paleo food ingredients (with a focus of fresh, organic and local) and kitchen equipment. Most of the rest of the book is divided into sections covering breakfasts(“to start off your morning”), ap-petizers (“small bites”), “soups, salads, and sides”, “the main event”, kid-friendly foods (“for the kid in us”), “muffins, loaves and morning cakes”, “sweets and treats”, “basics”, and finally a few drinks (“sip on this”). Two pages of menu suggestions—showing how some of her recipes can be combined, a resource guide and a substitutions and conversion page complete the contents. However, it would be a disservice to Ms. Walker to not go into a little detail about the book and the recipes.

First of all, Against all Grain is a large format, 368-page volume with a classy folded cover and exquisite photography. The glossy pages are thick and have a quality feel to them. To keep from getting spatters while I tried the recipes, I used a stand-type acrylic book holder. I tried several recipes. Ms. Walker states that she has striven to create paleo recipes from foods she and her family knew and loved. Fortunately for me, her favorites are mine as well, so finding recipes to sample was easy peasy. I made the Thai “Peanut” Vinaigrette (p. 314) to serve with her Asian Mango Slaw (p. 106). We loved both taste and texture, however, since coconut oil solidifies when cold, I recommend giving it a few seconds in the microwave to liquefy the dressing. I also made her Currant Scones (p. 232) and found them delectable. I’m a scone lover and plan to try the Lemon Curd listed in the sweets section. Next I made the Slow Cooker Sesame-Orange Chicken (p. 130) and found the sauce way better than the sugar-laden creations in other Oriental recipes. I made the Orange-Cranberry Muffins, once with fresh cranberries and once with dried, and found them the best I’ve had. And today I made her Marinated Artichokes (p. 76) and World-Famous Sandwich Bread (p. 226). Both were very good, however, I admit to preferring Brazilian Cheese Buns over sandwich bread. (A tip from another reviewer suggests using the 7 ½-inch bread pan, which I did, with the result of a higher loaf.) My preference notwithstanding, Ms. Walker has created a gem of a cookbook with many delicious-sounding dishes. I will be making many more of the recipes featured in Against all Grain. It has just become my go-to cookbook.

Thank you Ms. Walker.

It bothers me when people who eat paleo create "cheater" recipes so they can eat cake without really eating cake. Don't eat it period if you're on this diet you don't need to be making excuses and fake cakes. Eat real paleo meals not pretend muffins.

When I first met Danielle, I was living in Kona and she dropped off a batch of the "Spiced Pumpkin Muffins" (see page 228). She cut them to be "sample size" but little did I know when I grabbed that delicious piece of heaven, that my life would be forever changed. I think I ended up eating all the samples in the most selfish way possible.

Danielle has a way of introducing a new style of eating with incredible ease. Her recipes are vibrant and packed with flavor, easily making each food item the "the best thing I have ever eaten" and it's always followed by an oohhh and an ahhh. This book has a picture on every page, which makes you instantly drool...making each recipe a full food experience. My biggest fear is getting cookbooks and trying to cook a full meal...because I mess up every time. With Against All Grain, I am able to cook each meal with ease, playing a little Celine Dion while I do a little dance, because Danielle has easily made cooking fun! I have tasted a majority of these recipes and even when I attempt to make them, they come out tasting the same. I love the fact that she has chosen to take extravagant meals, and simplify them for the every day person. This cookbook is hands down, the best cookbook I have ever read and cooked from.

Some of my favorites, which I urge you to try, are:
In my opinion, the best meal I have ever eaten and the one I would drop any life event for is the famous "Curried Short Ribs" (page 124) with "Mashed Cauliflower" (page 122) followed with the unbelievable "Mint-Chip Ice Cream" (page 282). "What a treat" has easily become my staple phrase when I think about every recipe in this book. Danielle, you have done it. You have easily changed the way I think about food and your story is inspirational. You are easily changing the world one recipe at a time! Congratulations!!!

A true love story recipe for all of us.... Simple small town girl changes the world with her testimony. Danielle Walker shows up being exactly who she is; one of US! A real girl; self taught cook and photographer, wife, mother, daughter and girlfriend who finds herself in the midst of a painful disease and through her biggest struggle delivers healing and hope for many. Inspirational in an unassuming, humble, grass roots kind of way, I find the simplicity and clear almost basic nature of the recipes so refreshing. I love that she sorts out what to use and how to use them as if you are standing next to her and the mixing bowl. She is a pioneer in showing us that our story can have meaning and with the right recipe we can change the world. We just need to go AGAINST ALL GRAIN! I am going to order one for everyone on my Christmas list; it is the great gift of delicious food, love and health all wrapped into one! LOVE THIS BOOK!

Pros:
Beautiful pictures. Lots of great ideas for Paleo and other special diets.
Most of the recipes are new (i.e. not published on her blog) and unique ideas.

Cons:
Overall I found the recipes could have been written more clearly more concisely.

Some of the recipes require special equipment such as a dehydrator and an ice-cream maker. While this isn't necessary a bad thing, the need for special equipment should be highlighted at the top of the recipe and not buried in the directions.

The index is terrible.

I felt like the author assumes readers have endless free time to spend in the kitchen and a large budget as well.

Having just been told I need to be dairy-free, gluten-free, tomato-free, and chocolate-free (so far), many Paleo recipes meet the bill. I like reading about Danielle's story about her autoimmune issues and healing herself through food. I'm less likely to embrace a food lifestyle if it's the "latest thing." I'm looking forward to working my way through this cookbook.

This is a beautifully illustrated cookbook with clear and easy to follow directions, although it is of limited value to vegetarians and vegans, as most main dishes, soups, and appetizers contain meat (most can however be re-imagined as vegetarian without too much work). My one problem with this cookbook is that it fails to provide nutritional information for the recipes.

I learned a lot just from the intro! This is a great cookbook with lots of tips, photos, and educational information. I tagged a bunch of recipes to test out. -1 star only because some of them look very time and labor intensive, but not all. Looking forward to taste testing & trying her other cookbooks, too.

I’m starting to experiment with a much more “clean” diet, less processed and eliminating some common triggers. Danielle breaks down Paleo specifically in this cookbook. I especially enjoyed the extras in this book explaining some common ingredients she uses that are a little off the beaten path for those who haven’t cooked this way before.

I’ve made quite a few of the recipes in this book and so far have not had one I didn’t enjoy. The blueberry waffles are so good and comparable to gluten-made waffles. Many of the main course entrees are easy to understand and delicious. I made the chocolate chip cookies today and they turned out great!

I’m not following a 100% grain free diet, but really am
enjoying trying out some new ingredients and recipes. The one piece that poses a challenge is obtaining some of the ingredients she uses in these recipes. I still haven’t found a few or they are much more expensive than I’m willing to spend at this point. I did have some on hand before I got this book so the burden of a whole new shopping list was avoided slightly for me.

This is a gorgeous cookbook with a color photo for every recipe, but it uses a lot of coconut products, which I can't do. The recipes are based on Walker's personal version of the Specific Carbohydrate Diet, and so many of them are still suitable for that diet, and the whole book is grain and dairy free, as well as free of refined sugars. The table of contents for each chapter tells you if a recipe is nut free, egg free, vegan, or fit for SCD.

Walker uses palm oil shortening as well as coconut oil in her baking. Measurements are in U.S. Volume. There's no storage advice, and the index is arranged by type of thing with a little thumbnail of the picture next to it, and then there's another index by ingredient that's just a huge list of page numbers.

Probably an excellent paleo cookbook! But not for me.

She does the "works for autism " thing and I need to clarify it. IFF your kid has diarrhea etc. 1st, no dairy is no casein protien. Includes modified milk solids. Remove instantly changes in 48hrs. Gluten takes 3 mths and must be weaned out. It is not a cure, it removes the IBS, daily nightmare , night terror , the stoned... where they trip all the time and never put their hands out. Normal tummies . ... nada. Returning to these foods they must be weaned back in . ... tiny bit at a time.

There are some recipes I want to on try, like homemade almond milk... see the severe one still doesn't drink regular milk. He went on a dairy free diet at 6 mths. Does nothing and no reaction when he has cheese.

I'm a sucker for a great paleo cookbook. I love Danielle Walker's website, and the cookbook is a beautiful representation of many of the recipes on her site. I would love this book so much more if there were more easy entrees instead of paleo granola and baked goods, along with a whole section of kid food. I guess that's a great thing to have if you have a kid and you are eating paleo, but it's an entire wasted section for me. I've read this cover to cover and have made a few recipes. The braised chicken in mushrooms and artichokes is by far my favorite, and makes the cookbook a justifiable purchase in and of itself.

Ok so I feel bad rating it any less than 4 stars just because it is SO thought out. That being said, I would never make very many of the recipes because they are a little too complicated for my liking. Lots of ingredients (though mostly lots of spices) and just too complex for something I would actually make every day. However, this WOULD be a great cookbook for someone that is cooking for a family and/or someone that loves to cook and doesn't mind a bit of a challenge. Very thought out cookbook and very descriptive.

great ideas. missing shirataki noodles entirely from what i've seen, which, btw, are awesome. smell kinda nasty right out of the bag but with washing and proper prep they're great. one thing i really dislike about the book is the huge emphasis on coconut everything. if you don't like coconuts, have fun finding substitutions for your substitutions. the entire book is better used for meal ideas than to follow expressly, but there's A LOT of coconut. ew.

I enjoyed this book so much. The recipes are so enticing (although a little laborious) that I've had the book 3 days and already made 3 recipes from it. I know that following the Paleo diet would be a lot harder/more miserable if I didn't have this on hand.

First, I would like to applaud Danielle for keeping it real. She shared that kitchen failures were a part of learning to cook. She even shared the details of one of her failures.

Second, she shared the details of a medical condition she was diagnosed with for which her prescriptions did not help (they often made things worse). The doctors, naturally, refused to entertain the notion that dietary changes would help her.

Guess what? The doctors were wrong. Dietary changes helped Danielle. Hence this book!

In addition to the above Danielle also provides useful tips. These will especially prove useful for first time users of alternative flours or milk.

The photos and graphics are amazing!

Note for all my vegan cookbook lovers: Danielle is not vegan. Regardless, this was a great book and I’ll have no problem altering most of the real food recipes. Sadly, I’m not a fabulous baker so I am not sure how to alter the dessert recipes.

There is a recipe for sweet potato chips that sounds amazing. If the Eagles make the Super Bowl I’ll celebrate by making these.

Crazily enough my second favorite recipe is the Clam Chowder. Easy to veganize by removing the clams and bacon. Everything else is “accidentally vegan.” I will add some roasted eggplant depending on the season.

Eek! The Thai Iced Tea recipe! I cannot wait!!!

The book concludes with Resources and Conversions and Substitutions. Sure, a great cookbook should have Conversions and / or Substitutions and I’ve seen plenty but this book has the most aesthetically pleasing. And bonus is this version also includes baking pan substitutions which I do not recall ever seeing. Imagine you don’t have a bundt pan well Danielle shares what to do with all that cake batter! No, it’s not grab a huge spoon and eat it. Although…

Finally, the recipe index. I’ve NEVER seen one quite like this! Every cookbook author should use this format. No, I’m not telling you what it is. Ha! Buy the book!!

While I have not made every single recipe in this book due to different food allergies and taste preferences, I have tried a lot and have enjoyed just about all of them! My favorites in this book thus far are the Pulled Barbecue Chicken Sandwiches with Coleslaw and the Korean Beef Noodle Bowls. I have made them multiple times for multiple families and they all rave about them! One thing I absolutely LOVE about Danielle's books is that she has a picture for every single recipe; I have never owned cookbooks apart from hers that do that and it makes the selecting and cooking processes so much easier! If you like this book, check out her others. My favorite is the Meals Made Simple book!

Holy smokes, this cookbook is out of control amazing! I found it at the library book sale for like a dollar, and it’s probably one of the best cookbooks I found for Paleo. Gorgeous illustrations, innovative recipes I haven’t seen anywhere else, and a stellar dessert section! The only minus is that a lot of the recipes are a little labor-intensive and complicated, but there’s such a variety to choose from that there are plenty of simpler recipes to do, saving the more complicated ones for special occasions. So I’m going to give it all five stars!
