I'm a wife and a mother to a beautiful 7 year old and active 4 year old . I love to cook, but as crazy busy as my life is, the slow cooker is my life-saver! My passion for developing recipes started at a young age when my grandma taught me and my cousins to cook. During my college years, I began to experiment on my own and as I entered the work force, my creativity really developed. My second cookbook, The Gluten-Free Slow Cooker will be released on Oct. 1, but it available for presale wherever books are sold now. My first cookbook, Slow Cooker Recipes 10 Ingredients or Less and Gluten-Free is available for sale online. In addition to writing cookbooks, I teach Elementary Music, I'm a Young Living Essential Oils Educator and a blogger. Am I crazy busy...or just crazy? Yes, but I love living my life the way I'm living it!
In her preface, cookbook editor Hope Comerford reassures readers that this cookbook has it all: “What makes these recipes light and healthy? Well, it depends on your definition of healthy. Some people are choosing a low-carb lifestyle; some are choosing to focus on whole grains, some are focusing on low-fat, low-sodium or low-sugar diets; and some are looking for gluten-free recipes. No matter what you deem ‘healthy,’ you are sure to find what you’re looking for in this book.” Yes, there a few — very few — keto recipes in here and some low-sodium. But, in truth, this is a cookbook for folks cutting fat and calories. If that’s what you want, congratulations, this is an excellent book for you, with delicious recipes you can make in the fraction of the time it would take you without a pressure cooker.
But, if you’re looking for low-sodium, keto, or other variations, you’ll do better elsewhere.
Only 5 recipes I would consider trying. Some look interesting but I already have similar recipes. If people are new to IP cooking, they may find this cookbook more useful. Includes pictures for many recipes but not all.
Recipes are well laid out and instructions appear easy to follow. I just didn't find any recipes that I thought my family would enjoy... though a few did appeal to me.
