This was a winner!! I love my cast-iron and I also love one-pot/bowl/pan meals, so the concept of this one immediately intrigued me. The book is divided into sections--veggie/eggs, seafood, chicken, beef, and pork--and while not all of the recipes have photos, the vast majority do. A good variety in terms of flavor profiles, with recipes for smaller groups or a crowd, and many kid-friendly pleasers. Some unique twists on classics--such as a chicken pot pie topped with baguette slices instead of mashed potatoes--as well as some recipes/flavor pairings I'd never considered! I bookmarked a ton of recipes, and am very excited to get cooking!

Recipes I've Made:
Meatballs with Caramelized Onions and Lemon Pine Nut Rice - Easy and it came together really quickly! Super delicious, and this would definitely be a great recipe to add into the weeknight rotation.
Grits-Crusted Ham & Cheese Quiche - fabulous use of some of the leftover holiday ham! Pretty easy to throw together and really tasty! I loved this unique twist on a quiche!
Tuna Noodle Skillet Casserole with Prosciutto and Peas - I don't like peas so I subbed in edamame and it worked like a charm! Really tasty and satisfying take on a tuna noodle casserole!
Root Vegetable and Beef Skillet Gratin - fairly quick and really tasty; makes for a great comforting fall/winter dish! I'd probably bulk it up a bit with some chopped or frozen veggies, as I did find myself wanting a bit more vegetables and didn't feel like adding on a side salad.
Edamame-Ginger Rice with Chicken - made a few modifications because of what I had on hand, but it still turned out great! I did end up using my dutch oven because I was a little worried my 10-inch skillet wouldn't be big enough (even though that's what the recipe called for) and I think that was the right call, but it was an easy switch!

When Jackie Freeman says one pot, they truly mean one single cast iron skillet. Yes, you can make any of the recipes in Cast Iron Skillet One-Pan Meals in a single 10 inch pan.

I really enjoyed Jackie Freeman’s writing style. They have a fresh, friendly, and downright funny approach to delivering the facts which made this cook book a joy to read. Cast Iron Skillet One-Pan Meals is also chock full of stunning, and endlessly helpful pictures. There are a nice variety of super simple entrees, as well as more complex and impressive options. The author also includes a good selection of veggie, meat, and fish options.

As I made my way through, I bookmarked so many recipes I literally had no choice but to start cooking! In fact, I made several of the chicken recipes and most of the non-meat selections, and was very happy with them all. The recipes are easy to follow, though I only attempted the easier ones.

Cast Iron Skillet One-Pan Meals is filled with clever chef tips, both general ones as well as specific to Jackie Freeman’s recipes. One that impressed me is in the chicken enchilada recipe, with the option to cut the tortillas into triangles mixed in before baking. (Or make life super easy and simply serve corn chips on the side.) Nice!

I love my cast iron pans and use them daily. This is a nice cookbook for cooks who know their way around the kitchen and are looking for relatively simple but still high end meals.

On the plus side, there’s a big color photo for nearly every recipe. Many of the recipes sound and look tasty. There’s also a nice variety of comfort, international and other styles of dishes. Freeman tells you how to take care of your pan too. I also appreciate the recipes all call for real food ingredients— not a can of cream of something soup in the lot.

On the downside, there is no nutritional information. Most of the recipes are high in animal products and not the healthiest. There’s a lot of stuff like heavy cream. These certainly aren’t diet dishes and I hope you’re all working in the fields to burn them off and serving them with a giant salad. There’s also a lot of wheat, carbs and sugar, even though these are all savory recipes. Since my husband and I are clean keto, some of our family is vegetarian, and most of our family is gluten free, these recipes were all vague inspiration at best for my kitchen.

All that said, it’ll be a great fit for many. If you want some relatively fancy but still doable dinner ideas, this could be a nice resource.

Cast iron cookware is a classic kitchen staple, one that probably brings to mind fried chicken and Sunday family dinners, but “Cast Iron Skillet One-Pan Meals” is anything but traditional. With a whole meal in one pan and lots of elevated recipes, this cookbook will have you reaching for your cast iron skillet again and again.

I have to admit that I have a cast iron skillet that’s never been used because I thought the whole process was intimidating, so I found the section about proper seasoning and caring for cast iron cookware to be worth the entire price of the cookbook. But even if you’re a cast iron pro, you’re going to find a lot of tasty new recipes to try. Divided by fish, beef, pork, poultry, and vegetarian dishes, there’s something for everyone’s palate. The flavor combinations are modern and inventive, and although there’s no nutritional information, a lot of the recipes seem surprisingly healthful. Many but not all of the recipes are accompanied by delicious-looking photos, and I wish there were even more of them.

This book made me glad I owned a cast-iron pan (a wedding gift) and had a wife who took good care of it, as the author made me want to try out lots of new recipes. This book is gorgeously illustrated and written with a sly sense of humor that makes reading through the recipes a pleasure. Here are a few things I learned:
1) NEVER put your cast-iron skillet in the dishwasher (or the author will come to your home and dress you down).
2) Cast-iron maintains and evenly distributes heat, so once it's hot, you can leave your temperature at or below medium.
3) You can clean odors out of your pan by baking it at 400 degrees for 10 minutes.
4) Cast-iron is great for a dish that starts on the stovetop then bakes in the oven.
5) An online cookbook on an iPad is a joy in comparison to looking up a recipe online and having to fight off a dozen pop-ups to get to and through the recipe.
6) You can make pizza in your cast-iron skillet!
7) You can brown things then bake them in your cast-iron skillet.
8) You can make chili on the stovetop then bake biscuits on top of the chili in your cast-iron skillet.

I admit I have not yet made any of these recipes, so for now I am just taking the author's word for all of this, but she writes really well and has a trust-worthy style, so I'm betting this is all true. I can't wait to find out!

Cast Iron Skillet One-Pan Meals contains clear and concise instructions for seasoning and using a cast iron pan. I really appreciated that since I received a cast iron pan for Christmas that I have yet to use.

The book also contains recipes spanning the globe from Thailand to Africa. The recipes are clearly written for a bigger foodie than I am. Most contain at least fifteen ingredients. Sixteen ingredients for pork ramen seems a bit intimidating to me. However, the cooking process is relatively straightforward though and should be doable by relatively new chefs.

Unfortunately, neither nutritional nor allergen information is included. And many of the recipes could be cooked in any fry pan. Though some must be finished in the oven so an oven proof skillet or Dutch oven would be necessary.

If you are trying to impress your mother-in-law with your cooking skills, Cast Iron Skillet One-Pan Meals is the perfect cookbook. But if you just want a meal on the table, it may be a bit too fancy for a weeknight. 3 stars.

I was interested in a book that said I could cook everything in one Skillet. I have a cast iron skillet but have never used it beyond scrambling eggs. I picked several recipes to try and was pleasantly surprised at how easy it was to follow the directions. I enjoyed the meals so much that I bought my mother a copy of this cookbook. It gets a 4/5 for me.

Well-conceived recipes that mostly fit on one page (a preference of mine), bright captivating photos of the finished product, and good introductory material make this ideal for anyone who wants a contemporary guide to making delicious, nutritious, one-pan meals. Also included in the Intro are tips for choosing and maintaining cast iron skillets which I found very valuable.

Got this ARC from Netgalley, I skimmed through, cooked one recipe, and then ordered a copy for myself.

There is a lot of variety in the book and so many great recipes with different styles and flavours. I really appreciate that it also has information on properly seasonings and caring for cast iron skillets.

This would be an excellent gift for someone looking for interesting but also family friendly recipes, or for anybody just getting started on their cast iron cooking life.

Cast Iron Skillet One-Pan Meals is a specialized cooking guide with recipes for cast iron one-pan meals by Jackie Freeman. Released 1st Nov 2022 from Sasquatch Books, it's 208 pages and is available in paperback and ebook formats.

I love my cast iron ware. Some I've inherited from my family members (who inherited from earlier generations - my dutch oven has been in near constant use for more than a century), some I've bought at flea markets and estate sales. Cast iron is tough, useful, healthy, easy to care for, and incredibly durable. I love the connection and gravitas that utility items in constant use for decades develop - they have (literal and figurative) heft.

This book begins with an introduction and short care and maintenance guide for cast iron cookware, and iron's suitability as a material with regard to durability. There's a good tutorial on conditioning and caring for the cookware. These pages fill out ~8% of the total content.

The recipes are arranged by category: meatless, fish & seafood, poultry, beef, and pork. I really appreciated the inclusion of plant based dishes. These are -hearty- main dishes which are tasty and varied enough to get non-vegetarians to the table without complaining.

The recipes are given with imperial (American) measurements. Recipe ingredients will be easily found at any average well stocked American grocery store. Some very few ingredients might require a trip to an international grocer or healthfood store. Nutritional info is not included. Cooking directions are straightforward and easy to follow.

There are a wide variety of cuisines represented here, from variations on paella to kimchi and all destinations between. There are enough recipes to keep even the most ardent cooks going for quite a while. Most of the recipes (circa 75% by my very rough count) contain one or more photos. Serving suggestions are attractive and appropriate. Graphically it's a very appealing book.

Four and a half stars. Really well done. Highly recommended for public library acquisition, home use, and definitely for gift giving. Lovely gift suggestion (bundled with a reconditioned cast iron skillet in a generous size for a family member leaving the nest?).

I didn’t need a cookbook to tell me my cast iron skillet was the most prized item in my kitchen. Honestly, it rarely leaves my stovetop.

This was a really nice collection of recipes, though. I particularly liked the Glazed Salmon with Black-Eyed Peas (perfect for New Year’s Day), the Three-Bean Tamale Pie, and the Edamame Ginger Rice with Chicken.

My only complaint? Where’s the berry crumble? The Mint Chocolate brownie? The Skillet Cookie? A cookbook just isn’t a cookbook without a dessert section.

Grain-Free Chocolate Chip Skillet Cookie

2 tbsp ground flax
1/4 c milk or substitute
½ c coconut oil, melted
¼ c nut butter
1 c coconut sugar
2 tsp vanilla
1 ½ c almond flour
1/3 c coconut flour
3/4 tsp baking soda
1/2 tsp salt
1 c chocolate chips (optional, but who are we kidding?)
Mix all ingredients right in a 12″, seasoned cast iron skillet.
Spread dough evenly, with a fork
Bake at 350* for 20 minutes, or until the edges are lightly golden

Author Jackie Freeman begins by explaining how to care for our cast iron cookware. I have several pieces of cast iron cookware and love them all. However, you do not want to use them on a flat top stove. We usually think of skillets when we think of cast iron. Cast Iron isn’t as pretty as other pans, but it is a great way to cook. There are several rules for cooking with cast iron, most of them have to do with cleaning the pan. “Never put your cast iron in the dishwasher…Never use soap on your cast iron…Use wooden or plastic utensils…Let your skillet cool before tossing it in the sink…Allow your cast iron to breath when storing.” A cast iron pan needs to be seasoned. “Most cast iron skillets/pans are preseasoned at the factory. The more you use your pan, the more you will lose the nonstick surface. Occasionally you may need to reseason your pan.” “Cast iron is naturally nonstick.” There are many uses for cast iron; “I liked the idea of using it for a panini press. You place your sandwich to be pressed in a larger skillet, then place a smaller skillet on top.”
Author Jackie Freeman has included numerous recipes. I’ve only had time to try a few and they were delicious. Good Ol’ Beef Pot Pie was a real winner as was the Pork Chops with Cashew-Lime Rice. I intend to try many more. This book has an excellent index. The photographs complement this book. In the index the page numbers that are in italic refer to the photographs.

My husband comes from the South and loves cast iron. Me? I grew up in the North and we didn’t really cook with it, so knowing that it needs special care I was always leery of using it. No longer! This book not only gives great detail on the care of Cast Iron, it comes with fabulous recipes that are made in the skillet itself. I’ve used our cast iron skillet for corn bread and my husband uses it to brown steaks we’ve cooked in the sous vide, but he always cares for them. Now it’s my turn!

The recipes are easy to follow and don’t use hard to find ingredients, making this a huge plus for me! A few more pictures would be nice, but this books is about actually cooking and using the pan rather than just providing food porn. I am going to get this book for the younger women in our family along with a cast iron pan for the holidays. It’s time to add cast iron cooking to our repertoires!

Unlike many of the cookbooks I receive, this one has recipes I find interesting even when I'm not hungry. Not every recipe, of course, but more than I was expecting.

Cast iron is the best cook pot material and is experiencing a revival. We have seen a slew of cast iron cookbooks in recent years. Jackie Freeman presents a series of recipes that are cooked in an iron skillet and take advantage of the properties of the ironware: slow heating, ability to get very hot, and stovetop to oven. The recipes are all presented for the skillet, but there are a few that merely sub a skillet for a cake pan or cookie sheet. There are stews which should be done in saucepans. But if somehow, oddly, all you own is a cast iron skillet then here you are.

There are several baked strata recipes with interesting flavor combos. Again though, the skillet is only replacing a cassarole dish. For people wanting new tastes there is a celeriac recipe with fish, and Ms Freeman seems to use bulb fennel more than I do. She brazenly breaks the no cheese with fish rule.

I'm not at all convinced that Paella-flavored orzo is a real thing, and her recipes for red and green Thai curries are ridiculous. Just adding curry paste to any old rice dish doesn't make it Thai.

There is no denying that only one pan is used, but several recipes have us cook dish #1 and hold it in a bowl while we make dish #2 in the same skillet, and then combine to serve.

Ms Freeman's style is a bit chatty for my taste but her info is sound and should give you some new ideas. The book, coupled with a new skillet, would be a nice wedding or shower gift or to launch a recent graduate.

I love cookbooks and this is going to be in my collection to use over and over.
I grew up watching my mom use her cast iron pan. This cookbook expands my recipes to use in my own cast iron pan.
I know for sure that this is a cookbook that cast iron users enjoy using. The author did a magnificent job of teaching the way to use cast iron. It has everything in it from using to how to care for the pans.
The cookbook is filled with one pan recipes, and I am going to make many of them for my family.
This cookbook and a cast iron pan together will make a fabulous holiday gift for any cook on your list.

All in one pan.

This is a great cookbook to have on hand. Of course, you must have a cast iron pan and I recommend reading this book before getting a cast iron pan so you don't mess it up before you even use (like I might have done ages ago). Great tips on how to care and clean your cast iron pan and then on to the recipes. Well laid out with plenty of photos (usually over head shots) and generally easy to make meals, all in one pan, a cast iron pan. No desserts, because the title says it all, meals in one pan. Very handy to have on hand with our busy lives. Some pretty creative recipes and riffs on the familiar.

Yum! This book had tons of great recipes, many of which seemed doable in terms of the number of ingredients and skills required to complete them. The directions seemed clear, the pictures were lovely but straightforward, and it's the kind of cookbook you could come to rely on. It also comes with great information on purchasing, caring for, and maintaining your cast iron skillet. I'm looking forward to trying a few recipes from the book.

Thank you NetGalley for the opportunity to review Cast Iron Skillet One-Pan Meals. I believe every kitchen is not complete without a cast iron pan, and this is an awesome cookbook for great recipes. Taking care of the cast iron is the biggest hurdle for me personally from regularly cooking with one and this book gives instructions on how to take care of it. I loved the variety of recipes from Orzo Paella, Seared Duck Breast, Cheeseburger Macaroni, and frittata. I like how the book is divided by the type of protein with a plethora of recipes. I would buy this book for myself or a friend!

Jackie Freeman's Cast Iron Skillet One-Pan Meals is a nice book for those who might be intimidated by their cast iron and are looking for recipes to help them use it mote often. It includes helpful tips for cleaning and properly taking care of your pan. The pictures were nice and the recipes were decent as well. My only knock is that most of these could be cooked in another pan - or even in the oven - and turn out just fine. I understand it's for using your cast iron, but was expecting something more recipe wise.

There is a fantastic assortment of recipes and I found that many recipes can have some of the ingredients switched out to suit your liking. I made the orzo with asparagus, peas and parmesan and stir-fried teriyaki beef with broccoli and absolutely loved them, I'm looking forward to trying some more recipes.

This book caught my eye because I LOVE one-pan meals and we have cast iron pans that need to be used.

It contains great information about caring for cast iron pans and how to use the pans in different cooking scenarios. In fact, I took notes so I could remember all the information. It also has some great dinner recipes. I found several that I want to try in the next few weeks.

This book would also make a great holiday gift!

No kitchen is complete without a cast iron skillet, it's even better if you have inherited a well loved skillet from your family. But not all recipes were meant for this iconic cooking vessel. I have cooked many of the recipes from this book and found them all easy to follow and the results were excellent. Let these recipes start your cast iron journey while your skills develop and your imagination gives you so many more ideas. This cookbook has earned a place of honor in my kitchen library.

This is a nice recipe book!

There's a variety of dinner recipes in this book from seafood to chicken. The book includes instructions on how to prep and care for your cast iron. I was hoping for more photos of finishes recipes since I like to see those in recipe books. Some of the recipes are also a bit time consuming, but overall this is a thorough guide to cooking with cast iron.

I loved the author of this book. She gave no nonsense help with a bit of attitude. She knew her stuff and while it was 'in-jest' it was also serious. I would recommend this book on the taking care of cast iron section alone. A lot of the recipes sounded good, but I would have to buy several things to do one recipe. In my experience, I buy them and then forget which recipe I purchased the ingredients for.

So I have a cast iron pan that I have mistreated (used the dreaded soap to clean it *GASP* and not seasoned it properly). This book has completely inspired me to give it another go. Love the instructions that are clearly labeled with headings clearly labeled to make this a keeper book to keep on my shelf as a resource. The recipes look AMAZING and easy and yet inspiring and new. Thanks to Sasquatch Books for the advanced copy!!

I recently bought a cast iron skillet and this cook was great. It gave some background info on how to care for a season your skillet. I enjoyed this as I have never had one before. All the recipes included photos which I think is so important in a cook book. Lots of healthy meal ideas. If you are a seafood lover there is an entire section on seafood recipes. I can’t want to try the miso chicken it looks and sounds amazing.

This is a great cast iron cookbook! Cast iron can be hard to use, it retains heat and can’t be used for certain dishes. This cookbook delivers delicious sounding recipes along with good pictures. I made a few of the chicken dishes and they were great. 4 stars.

This is a great cookbook for learning how to use and care for a cast iron pan, and all the delicious things you can cook in it. There's a whole chapter on meatless meals, plus fish, poultry, beef, and pork. A little surprised there are no desserts, but the 75 recipes all sound fantastic, so, that's okay.

Most recipes have photos, but not every single one. Thanks to NetGalley for the ARC!
