Various is the correct author for any book with multiple unknown authors, and is acceptable for books with multiple known authors, especially if not all are known or the list is very long (over 50).
If an editor is known, however, Various is not necessary. List the name of the editor as the primary author (with role "editor"). Contributing authors' names follow it.

Lovely, quick read. Read on first volunteering shift at Queer Britain museum! Beautiful examples of queer joy and humour from authors spanning many different identities as well as confronting the sadness, pain and trauma that is so often part of the queer experience. What is most interesting to me is the general empathy that all authors extended to their younger selves and it’s a nice reminder to try and do the same for your current self.
