A huge variety of rice recipes, mostly entirely gluten free, but the highlights for me were the little chapters on history, cultural traditions, and interviews with other chefs and cookbook authors.
So many lovely recipes. However, lots look time and labor intensive, not to mention calling for ingredients that may be hard to source if you don’t live close to high end grocery stores.
Has a couple of vegan recipes and many that can be veganized with experience. Even has suggestions in intro on how to veganize. Recipes interspersed with interviews and history.
