I'm not a vegan but I'm the instant pot user in our house and I also love soul food so I grabbed this from Amazon Vine ages ago, mostly for ideas.
One thing was immediately clear: You really have to want it to eat vegan. A lot of the recipes use ingredients that I don't think any store within twenty minutes of me carries. Also, canned jackfruit is a popular meat substitute, apparently.
Aside from having to do a scavenger hunt for some of the ingredients, I found the book to be well written and found myself wanting to make and devour a lot of the recipes. Some, I'd probably do as is. Others, honestly, I'll be throwing a smoked ham shank in.
I haven't made any of the recipes as of yet so I can't say whether or not they still taste like soul food despite the lack of soul.
There is nothing healthy about these recipes - Vegan, but certainly NOT healthy.
Author, Ashlee Lewis, has taken many of the classic southern soul food classics and revamped them into vegan recipes and then created them to be prepared using an Instant Pot. The book begins by introducing the Instant Pot and this section is very thorough: why to use one, the various parts, settings, safety, accessories and tips.
Lewis provides a curated list of ingredients that support the the recipes. Pay attention because she doesn’t stray far from the pantry. I hope you like jackfruit! Full disclosure, I didn’t try any of these recipes because the fat and sodium counts are far beyond what is acceptable for me.
The recipes include: category, (quick, soy free, GF, 1 pot, etc.), prep time, cook time, other directions and total time, ingredient list and step by step directions. At the bottom of the recipe you might find a tip and all recipes have daily values included; take note they are PER SERVING. If you have issues with salt, carbs, and fat, check the values before you start cooking!
Formatting is simple and clean, paper quality is fair; there is no varnishing so if you get the paper wet, it will stain and warp. The cover is treated but the insides are not. Also, there are very few pictures so new cooks or beginners might need some assistance.
All things considered, good for vegan substitutes but for sure not healthy📚
