This is a very good informational book it explains things in a very simple way to understand.(You should read basic cooking terms books or watch the food channel for 1-2 hours on Sunday) This book tells you everything from knife cuts to Chocolate. Be prepared to read it is a little over 400 pages. This book also contains many different recipes. If you are serious about cooking or the culinary arts then I suggest you read this book.

Rather impressive for a "dummies book". Some really good info in here. I only bought this because I saw the picture of Charlie Trotter and said, hey, wait a minute, I know who that is. His restaurant is phenomenal.
