I always make a point of not judging a cookbook based on how many recipes call for truffles. These books being of the pick and choose variety, I never see any point in getting my hackles up, or feeling defensive in the face of such tiny shows of elitism. But, I just wasn't able to let my own biases give way and enjoy all of the other interesting suggestions offered in this book.
