These loaves look gorgeous and the ingredients are generally safe for me. Unfortunately, this turns out to be the kind of hobby you'd have if you only wanted one hobby. In addition to feeding the starter twice a day for 7-10 days, each baking experience is about a 36-hour process. Not even limited to [do something in the morning] and [do something at night], the baking includes a number of steps throughout the day, multiple steps spaced out each morning and afternoon-- this is the kind of baking I would have to build my whole weekend around (and couldn't even manage it this weekend, since I work all day Saturday).
Great for people who work from home or work no more than part-time, and who don't mind GF sourdough becoming their entire hobby, entire schedule, and maybe entire personality.
I got into GF sourdough baking several months ago so coming across this book I was excited to see what the author had to say about it. I have used a ton of discard recipes from all over so was curious about the bread making aspect… I made the classic loaf and unfortunately it was pretty gummy so I will be playing around with the recipe a bit. I did kinda mix and match the flours, so we’ll see! Maybe I’ll follow up with a review later.
The discard recipes look delish and I’m excited to try those! Especially the sourdough naan! Yum! :)
I discovered your book at the library today and it is FABULOUS. I am going to need my own copy!! So many gluten free bread recipes are filled with those starchy “all purpose” mixes. I love all the whole grains used in this!
I’ve been making gluten free sourdough for a year, and I’m starting to branch out and make more complicated recipes and experiment, and this book will be so helpful to me.
The photos are also absolutely lovely and inspiring, and helpful in deciding what to make. I am always grateful for cookbooks with good pictures.
