Well, yes, another cookbook. At least it keeps me off the streets.

A new name to me, this Mr. Tower, but the fault seems to be mine. He has a solid (perhaps indomitable) reputation, and potent opinions on food. That makes his big volume, which starts from the absolute fundamentals, darned good reading for a cookbook. You're either compelled by his arguments, or provoked into thinking a little harder about your assumptions. That, in turn, is something that will get you off the couch and into the kitchen. A very good find.

As a professional chef, I think this is one of the best cookbooks I have ever read.
