I'm not vegan, but a goal of mine this year is to eat a wide variety of plants every week, and this book will help me do just that. It's full of delicious recipes, and includes a section on fermenting foods which I have wanted to try for a while now. Absolutely would recommend to anyone.

I was really excited for this book as it was really aesthetically pleasing. There were some things I did enjoy about it. It has some decent and accessible information, beautiful recipe pictures, and many of the recipes sound/look very yummy and are certainly healthier than most cookbooks. For me, there were a few cons as well. Roughly half of the recipes or so had pictures, but I really would have liked to see all of them. I know, cookbooks over the past nearly decade have spoiled us with many have pictures for every recipe, but seeing how this book was published this year and the type of book it is, I just expected it to have pictures for all. While some recipes seemed simple, there were some with like twenty ingredients, which just feels super excessive to me. Maybe when we are empty nesters one day and could spend a couple of hours preparing a meal, but that isn't the season of life we are, so I feel like, by default, many recipes were automatically eliminated by being too time consuming. Also, many of these meals are extremely carb heavy. I understand that some people eat that way, it just spikes my blood sugar way too high. I would like to try some of the recipes, once I'm not dealing with GD, but I think many would spike me even without it. Some of the recipes just don't have enough protein or fat for me to feel satiated. Although, perhaps the author doesn't either as she mentions being a serial snacker. I'm used to eating a meal and being satiated for a good 4-5 hours, but I feel like many of these recipes would have my blood sugar skyrocketing and dropping so fast that I would have to eat frequently and get needing more snacks, based on the recipes. I think that some subs could make them more tolerable (though with the massive variety in cookbooks, I think it would be easier to find a similar recipe in a cookbook that alligned a bit better nutritionally) and I loved the variety of veggies in many of the recipes, just wish the micronutrients were a bit more balanced. Overall,a nice book and it would probably be a great fit for vegans, but if your body doesn't function well on high-carb (me), it is not the best fit.

A beautiful cookbook full of colourful recipes.
In fact, the beautiful colours of this book is one of the things I love most about it, it makes all the food photography so pretty!

That said, a lot of the recipes are not necessarily what I enjoy. Very carb-heavy, despite the high amount of veggies, which must be because they are vegan and mainly Italian-inspired.
But a pasta recipe with a sweet potato sauce is not particularly attractive to me. Why the double carb loading?

There is a lot of research and information about healthy things for the skin, but this still isn't the veggy book that I need.
