The current CoVid lockdown has made fresh vegetables scarce. This is not as big a problem as we imagine. Many arid cuisines have been living with this problem for millenia. The desert cuisine of Rajasthan, the arid Chettinad cuisine, the monsoon month cuisine of Kerala, the paryushan Jain cuisine and many other cuisines have perfected themes to be used when fresh vegetables are not available. In all these cuisines, fresh vegetables are usually substituted with the following. 1. Sun dried vegetables/ seafood/ meat 2. Sun dried spiced lentil dumplings 3. Whole Legumes/ Sprouts 4. Split dals 5. Gram flour 6. Pakodi/ Boondi/ Sev/ Papad 7. Kasoori Methi/ Dried herbs 8. Dry fruits/ Nuts 9. Soya chunks 10. Seitan, Churpi (NW India, SE Asia) You can also stock up on long life vegetables listed below, which last for months without refrigeration. Remember to store them in a dark, dry place. 1. Garlic, Shallots, Onion, Ginger 2. Tubers (Potato, Yam, Colocasia, Sweet Potato, Chinese potato,..) 3. Squash, White pumpkin 4. Banana 5. Coconut/ Copra This book is a collection of recipes you can cook with no vegetables. Not even onion, tomato. They are all time-tested themes and can be eaten both with rice/ roti.
