I really enjoyed Jackie Freeman’s writing style. They have a fresh, friendly, and downright funny approach to delivering the facts which made this cook book a joy to read. Cast Iron Skillet One-Pan Meals is also chock full of stunning, and endlessly helpful pictures. There are a nice variety of super simple entrees, as well as more complex and impressive options. The author also includes a good selection of veggie, meat, and fish options.
As I made my way through, I bookmarked so many recipes I literally had no choice but to start cooking! In fact, I made several of the chicken recipes and most of the non-meat selections, and was very happy with them all. The recipes are easy to follow, though I only attempted the easier ones.
Cast Iron Skillet One-Pan Meals is filled with clever chef tips, both general ones as well as specific to Jackie Freeman’s recipes. One that impressed me is in the chicken enchilada recipe, with the option to cut the tortillas into triangles mixed in before baking. (Or make life super easy and simply serve corn chips on the side.) Nice!
