It's difficult to believe Cora Moore wrote Twenty-Four Little French And How to Cook and Serve Them in 1919. Ms. Moore was well ahead of her time, predating famous later chefs like Julia Child. She shared the same mission; to erase the myth French recipes are too complex for American cooks. Ms. Moore’s writings and her recipes remain relevant today, as does her deep knowledge of France and the dishes the country is proud of. While we cannot find any biography of Ms. Moore, we can share in her passion for French food, its people, and French cookery. Perhaps she lived in France for some time and was exposed to a variety of foods, chefs, cooking at home, and the delightful open markets. Perhaps she was driven to develop dinner menus for American households to enjoy French food within the limitations of economy. Most of all, her drive to push American cooks out of their comfort zones by presenting them with these twenty-four little French menus shines through.
