Potato is the essential cookbook for this most beloved, extraordinarily versatile and ubiquitous of ingredients. James Martin presents over 130 recipes and techniques that will inspire you to put potatoes front and centre of your cooking - from the lofty heights of a Pomme soufflé, to perfecting the humble Mashed potato. Featuring home-style recipes like Tex-Mex barbecued filled skins, Potato, sausage and sage tray bake, Potato pancakes and Pork chops with mustard Mac, plus chefs' favourites including Classic game chips and Pommes Anna, Potato shows why the spud is a staple in so many cuisines, from rustic country kitchens to Michelin-starred restaurant tables. The embodiment of field-to-fork cooking, this superstar of the food world is showcased by James in a wealth of imaginative recipes that you'll want to cook again and again.
Potatoes have changed history from The Elizabethan times to Irish potato famine to Vincent Van Gogh paintings. This collection of interesting recipes and side dishes Inc few cakes on them. Arbroath Smokies to Indian food. But there is no purple potatoes or Fury apple potatoes which I found upsetting but can't win them all.
James Martin can do no wrong in my eyes. A Yorkshireman of course, born not far from where I live. Easy on the eye, makes some excellent food/travel programmes and most importantly his recipes really work. Potato follows on from his recent tome entitled Butter. The book is beautifully photographed and packed full of potato dishes that I really want to cook. Apart from the Crisp Sandwich recipe that is - even if the crisps are home made. Just wrong, especially as he butters the bread (of course). I've already made the Crab Cakes with Katsu sauce, which went down well with everyone.
