Various is the correct author for any book with multiple unknown authors, and is acceptable for books with multiple known authors, especially if not all are known or the list is very long (over 50).
If an editor is known, however, Various is not necessary. List the name of the editor as the primary author (with role "editor"). Contributing authors' names follow it.

Back in November of 2009, my sweet husband, knowing how much I loved to read and seeing the Kindle (still fairly new to the world). I was finding some freebies and adding them to my list to read. I am now going back and catching some of these and reading them. I have found that while they still exist for my Kindles, they cannot be purchased any longer.
This was kind of a fun book. Definitely historical as many of the quotes are from the 1700 and 1800's. They were interesting as they showed the beliefs and thoughts of the people of the time.
The anecdotes in this volume are not significant historically. They are but captured moments of history over the past few centuries to be read for amusement.
This book will fool the reader at first. However, the stories were both humorous and enlightening. Overall, this book is an excell ent vehicle to take one's mind off the troubles of the day.
The old language and wording of these stories made this a difficult read for me, and I had to reread most of the anecdotes several times to fully understand what the author was conveying. However, once understood there are some funny stories in here. There are also some heart rending stores and, well, some strange stories.
The old-fashioned vocabulary and the heavily-European subject matter (stories about kings and noblemen of many centuries ago) made this difficult reading and of little interest.
