I've been looking through this cookbook, and there's a wide variety of recipes that should appeal to just about everyone. I was a bit surprised to see a fair amount of chicken and seafood recipes in here - for some reason, I was under the impression that Esalen had a vegetarian kitchen. However, each meat recipe is accompanied with vegetarian options (use tofu instead of chicken) and often with vegan options. All of the recipes use easy to find ingredients and there is lots of advice for cooks who are interested in making their kitchens more organic and healthy. This book is proof that healthy food doesn't have to bland or boring. I'm looking forward to trying more recipes out.
