Decorate the festive table with a wreath of evergreens and serve up some creamy artichoke soup, gin & beetroot cured salmon, a new take on Finnish ‘rosolli’ salad and parmesan & thyme broccoli. Winters in the Southern parts of Finland may no longer be as snowy as in my childhood, but the stillness of nature with its muted hues a poetic, calming quality.
This was a creative and inspiring read. The Nordic Winter Cookbook includes not only a range of recipes for seasonal appetizers, mains, desserts, and beverages, but also DIY craft projects and tips for holiday decorations, gifts, table setting, and course menus! Further, the artwork is some of the most beautiful I've seen in a cookbook and packed to the brim from cover to cover. This one is worth leaving out as a coffee table book! I look forward to trying out the Wintry Sage and Fig Sourdough and the Grandmother's Cardamom Cake with Browned Butter Frosting recipes.
