Celebrating the traditional cuisine of Chile, a collection of 130 authentic recipes, all of which have been adapted for the North American kitchen, presents delicious seafood and meat dishes, rice and beans, side dishes, and desserts, along with tips on wines and a discussion of Chile's culinary heritage. Original.
One of my favorite cookbooks. Any good cookbook will explain the history and cultural context of a recipe, and this one does so in a succinct style. I fell in love with Chilean food during a duty stint there, and this cookbook has many of my favorite dishes, heavy on tradition with very little fancy food that would only be found in better restaurants in the cities.
My father is Chilean so this was a fun recipe book with meals that I had seen my aunt cooking all throughout my childhood and now I am able to cook myself!
