Everyone loves meatloaf. It's the ultimate in homey comfort food, easy to make and, with a fluffy mound of mashed potatoes and some gravy, about as close to heaven as a meal can get. Maryana Vollstedt, author of such comforting favorites as Big Book of Casseroles and Big Book of Easy Suppers , presents her favorite recipes, including a classic loaf using a mixture of ground beef and sausage; a lively version with a horseradish-crumb topping; and an Asian-style meatloaf with a hoisin-soy sauce (and a spicy touch of wasabi for more adventurous folks). Maryana Bollinger Vollstedt was a creative, fun-loving woman whose life blended entrepreneurship, culinary talent, and community service. After graduating from Oregon State College in 1948 with a degree in Home Economics, she married Reed Vollstedt and co-founded Reed and Cross, a beloved garden center in Eugene, Oregon. Maryana brought a unique flair to the business, traveling to gift shows and shaping product selections with her signature taste. A prolific cookbook author, she published over 20 titles, including nine with Chronicle Books, and wrote the “What’s for Dinner” column for the Eugene Register-Guard for thirteen years. She cherished family, food, and hosting, and prioritized togetherness. Maryana and Reed were also consultants for Garden Centers of America and traveled internationally as flower industry representatives. In retirement, she mentored students at Cal Young Middle School for over 18 years. A dedicated member of Wesley United Methodist Church, Maryana left a lasting mark on her community.
As Meatloaf goes....... There are 60 recipes..... So I'm not a big fan of meatloaf, but the one made of corned beef sounded good as did the these others; Rolled w/ salami, deli ham & Swiss cheese (I'd use provolone), Greek w/ lamb, spinach & feta, Moroccan, and Glazed meatloaf w/ bacon strips (beef/pork & bacon: treif).
But the ones w/ Sausage & clams and the "Frosted" w/ mashed potato crust sounded rather awful to me.
There there are the "Other Loaves" and the Sides: Turkey w/ cranberry topping, Salmon w/ lemon & dill, Lentil w/ mushrooms & walnuts, Mac & Cheese loaf, nine types of potatoes, rice, couscous, orzo, & polenta.
The ideas are creative, the recipes are easy to follow, and there are nice photographs.
A great book of recipes if you're looking to spice up your boring meatloaf recipes with something different. I tried the Spinach meatloaf and it was yummy - will be trying more at a later date. I would have liked to see more recipes using plain hamburger instead of the ones with lamb, sausages, etc. as it's the basic ease of using hamburger that makes the meatloaf a simple meal.
