Good overview of using a bread machine, amount of gluten in different types of flour, the effect of sugar and salt on bread making, etc. Also there were some very interesting recipes in the book, including a few gluten free recipes. The only reason I gave this 4 stars instead of 5 was because I had difficulty translating the recipes into whether they would work in my small bread machine. The book did have a section discussing how much flour is appropriate for the different sizes of loafs a bread machine could utilize. But it leaves the reader to adjust the recipe for their own size requirements. Yes, maybe I am expecting too much, but I am a novice at this.
