I only recently got hold of a copy of this book - recommended by my fishmonger as the definitive recipe book. I have been to several of Leith's cookery classes in Kensington so have great respect for the whole enterprise. There are not many pictures but you can be guaranteed the recipes will work and reading the ingredients and method allows the imagination to do the rest. Lots of good ideas. Hundreds of recipes. Fish is expensive so it deserves to be cooked well.

Living on a coast, I have a number of fish cookbooks but this one is the most used. It has recipes for more kinds of fish than I’ll ever see, they’re generally straightforward but besides being tasty bring out the specific qualities of the fish they’re intended for. Este! Este! Este!
