Goodness people in the 1980s liked soft layered things. And one of the food editors was clearly ALL IN on Japanese food, the sushi recipe is much more complicated than is really necessary, especially compared to the (sensible IMO) compromises in some other recipes.

I did not really expect to come away from this with any food that I wanted to make, and indeed, I was right. But it was fun to look through.
