lets be real, who has all this shit in your pantry, I have really been able to use all my old recipies ... altered them to be gluten free... when you have to put 3-4 different flours to make it right ... PLEASE !
One member of my household has a wheat allergy (not gluten actually but close enough) and another has a milk allergy (whey unfortunately because lactose free is easy - whey seems to be in everything!) at any rate. This book has been very useful. There is a lot of good background information about different types of flour and GF and lactose-free alternatives. But my favorite part is a lot of the recipes just don't have anything that you have to substitute out. I find it hard sometimes to find recipes without some sort of milk or wheat product. I have made several of the recipes in this and everyone has liked them. The recipes also have a 'vegetarian friendly' tag if you need to incorporate that into your meal planning as well.
My one complaint is that almost half the book is bread/baking recipes. While this seems perfect, I live at high altitude and there were no instructions for how to alter the recipes. Most of them had several types of flour so I don't know which to add more or less of and how to adjust times, etc. Frankly, this is a common issue but EVERY recipe had a section on how to make it egg-free. So I was jealous they couldn't also include at least one high-altitude tip somewhere in the book.
We are not a gluten free family, but the cover stated that there were 150 gluten free and lactose free recipes. I was searching for lactose free recipes, and only found a couple that would work for us. Depending on where you live, some of the ingredients needed in this cookbook are harder to find.
Excellent chapter called "The Gluten-Free Pantry" includes history, uses, storage, nutritional value and web site information for many ingredients. I still find this cookbook of limited use for my multi-allergy family, but it looks like a great cookbook for other people.
