This sigle subject book, which might seem to narrow, or too specialized, really does this magnificent cut of meat proud. Written by a Southerner and a Jew, they explore ham, the myth, the legend, the meat--they smoke it, the use fresh han, they put it in salads and breads and soups, it is a fun book to read, and kind of scholarly when it comes to the subject. Highly recommended.
