There are chapters on soups and stews, salads, vegetables, meat, poultry, fish and shellfish, breads, sandwiches, breakfasts, cookies and brownies and puddings.
I've never made something from this book that I didn't think was great. Each "classic" has a really informative and interesting story about the dish's history. The recipes are thoughtfully constructed and precise, and I like how there is commentary on the different test recipes that lead to the perfected version.
I love these books; the author and staff take recipes and cook them using different ingredients and methods until they have the best tasting one. The banana bread recipe is to die for. I only rate this 4 stars because the range of recipes are limited.
