Many people would advise that sushi is best left to the professionals, and while I don't entirely disagree with this sentiment there are a large amount of non-professionals (and in many cases unprofessionals) selling sushi these days. With that in mind, and acknowledging that it takes years of training to make really fine sushi, it is possible for the dedicated home cook to make good sushi, particularly those not involving raw fish.
I have, using the recipes in this book, made sushi that is far better than some of the takeout (and even one or two sitdown) places from which I've purchased sushi. If one follows the instructions herein, that person, while not being able to match a sushi master, one will be able to better what's sold at the grocery store "sushi bar."
Although this book had alot of great step-by-step photos for creating sushi, I felt that the recipes were all very basic. For instance, the nori tuna roll is a piece of tuna wrapped in nori seaweed. No sauce, no rice, and no vegetable fillers. My favorite part of the book was the introduction. There was some great information on the origins and health benefits of sushi, as well as a comprehensive list of common sushi ingredients with descriptions.
The complete book of sushi by Hideo Dekura is an excellent source for all things sushi. If you're interested in making sushi, this is a must have book. I'm already a sushi maker, but this book inspired me to try new recipes.
This book contains material from Ryuichi Yoshii's previous book, simply entitled, Sushi. So you don't need both books. If you are going to pick one, pick this one, as it is more comprehensive, and has more interesting and innovative sushi recipes.

Margar af uppskriftunum eru frekar einfaldar, mikið um endurtekningar og hefði bókin því vel getað verið styttri án þess að tapa neinu innihaldi. Annar ókostur var að sumir bitarnir sem höfundur hefur látið myndað eru ekkert mjög girnilegir og það fær mann ekki til að langa að prófa uppskriftina. Það er samt vel þess virði að grípa þessa á bókasafninu og renna henni í gegn. Inngangurinn inniheldur ágætan fróðleik um sushi og japanska matargerð. Einnig eru nokkrar góðar uppskriftir inn á milli.
