I love to make Quesadillas, something I taught myself. My husband is a master at the BBQ Pit and smoker, so I use a lot of his meats when I make them. I’ve made them using the following meats:

Beef Chuck Roast
Beef Brisket
Burnt Ends
Chicken
Ham
Pork Loin
Prime Rib
Pulled Pork
Sausage-Andouille
Sausage-Chipotle/Monterey Jack
Sausage-Polish
Sausage-Roasted Reed Pepper w/ Queso Fresco

I liked this book, because there were several recipes I wouldn’t mind trying.
But at the moment, it is hard to get past using my husband’s BBQ creations —our favorites are brisket and prime rib!

WooHoo! Who Knew? Fantastic idea for quick supper!

This book knocks the idea of a long prep meal in a cocked hat! Now we have numerous recipes for exciting, nutritious, delicious meals ready in minutes and fun to eat.
This is now my go-to book for snappy eats with minimal angst!

What a great recipe book for my favorite food, Quesadillas

Great recipes and so many ideas. I love this cookbook. I love the desert ideas and the sauces. Too many ideas to choose from.

A fun little collection of meaty, veggie, and sweet quesadilla ideas. Some are a bit simplistic, like “take these salad toppings and throw them in a tortilla with cheese” 😝

This was such a great book with great ideas and totally awesome pictures. Quesadillas rock, one of the few things we ALL will eat in this family (our pip-squeak Maria is VERY fussy). You can pretty much do anything with it and hide just about anything inside there too. The turkey cranberry quesadilla rocked my world. So did the BLT. Really, how can you go wrong? And then there were the deserts... Smores quesadilla, oh I am in heaven. Berries and Brie, oh yes,yes, yes. This is a library book which I renewed like 3 or 4 times. I'm going to have to give it up this week, but not without copying at least 30 yummy ones into my recipe stash.

Wow.... I make some interesting quesadillas, but nothing like these. What I liked about the recipes is they are fast & easy and include a large variety of tastes which span the globe:

Berries & Brie
Mango madness
Spicy grilled flank steak
Caprese style (tomatoes, cheese & basil)
Mushroom madness
Caramelized onion & Gouda
Portobello & sun-dried tomato
Roasted veggie & goat cheese
Spicy Cuban
Sweet & spicy Asian
Aloha shrimp & pineapple
Thai peanut
Carne asada.....

And many many more.....

This is a fun book of wild quesadilla recipes from traditional to international flair. We have just started working through the many recipes in this book, but we are excited about trying all the different flavors. Quesadillas are easy to prepare and easy to enjoy. Just pick up these delicious treats with your hands and dig in.

Can't say that all the recipes are completely appetizing, but I do like the idea of using tortillas as a way to decrease the amount of bread consumption! And.. I tried the BBQ Chicken Quesadilla for lunch. Yum!!

This is an interesting recipe book. I'd never thought of sweet quesadillas before reading it. They really do throw everything but the kitchen sink in there (in a good way).

Who knew there were so many ways you could work a quesadilla? Great guide to being creative with tortillas, cheese and toppings.

Introduced me to dessert quesadillas, which I can’t believe I’d never heard of before. Some nice sounding sauces too. The meat/vege recipes on the other hand are pretty standard.
