This is a cookbook that substitute vegan items for the traditional items that you would have used. That is great if that is the route you want to take. if you are looking at taking a more healthy route with cooking, this is not the cookbook to use. The one redeeming quality of this book is that defines terms for cooking.
It seems like a great cookbook filled with recipes for vegan bakers. However it wasn't useful for me since I can't have any soy product and every single recipe had them in it somehow. I wish it had more of a variation, and didn't dependent entirely on soy to succeed.
Everything I have made in this book has been really good. Especially like the muffin recipes using flax egg substitute that I made from the instructions.
