This is absolutely one of the best soup cookbooks I have ever found--don't let the title fool you and think these recipes won't be delicious. Every recipe I have ever made out of it is fabulous. Some of our favorites/standbys: Mighty Minestrone, Curried Turkey and Spinach Soup, and Simple Butternut Squash Soup with Apples and Walnuts. Now if I could only find Indian curry paste in Louisiana to make that turkey soup!!
A great book filled with very versatile and delicious-sounding healthy soups for whatever way you are eating. I made the Broccoli-Almond Soup--made creamy and thick with ground nuts and used veggie stock to make it vegan.
