If you are looking for pretty pictures, this cookbook is not for you. This is a comprehensive guide to muffin recipes. I learned some great tips such as how to work with strawberries--a notoriously watery fruit--in muffins. Additionally, I learned the concept of "refrigerator muffins"; one can leave this dough in the frig for weeks and bake muffins as needed. If you are in a rut with your muffin-baking, this is your book! Savory and sweet muffins alike....
Lots of variety of muffins in this book, so it did get 3 stars. But for all their bragging about testing lots of different muffin recipes, most of them make more than 12. What do you do with leftover batter for 2 muffins? You’d think they could get the recipes adjusted to consistently make 12 muffins. - thus 3 stars.
Muffins are under appreciated in my opinion. But like cookies they are relatively small and extremely versatile. They don’t take a lot of time. They are relatively easy to master. This book presents a boatload of recipes. Wow!
This book is responsible for the summer I had where muffins were constantly on the counter. I tested many of the recipes, and still have more marked. The blueberry muffins, lemonade muffins, and applesauce muffins I have made over and over with great success. The corn muffins my family won't let me live down, although maybe I could try them with more honey... There's a muffin for everyone in here, from savory ones I have not been brave enough to try to the coconut ones that I look forward to trying next summer. Four stars for some not-so-great results and for making an odd number of muffins (I usually get 15-18).
This is one of those books that you just love. Savory and sweet muffins abound in this book. Each muffin has listed variations and suggestions for toppings and yes, Virginia, there are even gluten-free recipes in the book. The only problem I have with this book in some of the measurements. One recipe that comes to mind, called for 6 oz. of butterscotch chips and then said in parentheses, 1 cup. 6 oz. is NOT a cup, but 3/4 c. 8 oz. is a cup. This type of measurement missteps occurred throughout the book. That kind of sloppy writing annoys the shit out of me.
I got on a muffin kick this year, dispensing them like mad to everyone I know. So I was very excited when I found this book on the library shelf. Some of the recipes are quite good (Banana nut), but others like the Sour Cream Chocolate Chip are dry. A word of advice: try the recipe out before making a batch as gifts. Not all are winners!
I have yet to try the recipes I have selected, so I reserve more stars for them to turn out nicely. This is an amazing collection of recipes, I am excited to try some.
Good basic muffins and many ways to make them. Good reference. I made the Apple-Pecan Muffins and the Lemon-Poppy Seed Muffins and can vouch for their good taste!
Who knew there were so many different kinds of muffins! Tried some of these recipes and they were indeed delicious. Would like to add to my cookbook collection.
