This is the book that you want if you really want to nail the art of making fudge the right way, every time. I learnt a lot about making confectionery (and everything that can and will go wrong) from this one, and there are many many recipes for all sorts of goodies. Very much recommended and five stars overall.
I was hoping to like this book. The pictures were unappetizing (particularly the one of the pretzel rides dipped in chocolate) and the directions were lacking. I made the “Smith” fudge, which is a penuche fudge. The texture was not terribly smooth and putting granulated sugar in the food processor is nuts (why not just use confectioners sugar?). I ended up scrapping this whole recipe and went back to the one I always use. Perhaps other recipes are better, but I was unimpressed by the presentation as well.
