A simple explanation is carbs are killing Americans. Dr. Strand points out all carbs are not equal. The processed flour we use for breads, cereals, and pasta are worse than eating spoon fulls of sugar. He explains it scientifically. It's a pretty easy read. I've started avoiding most of the bad carbs, fortunately sourdough bread has some latic acid or something that makes it not so bad. The only thing I won't change is, I"M NOT GIVING UP PIZZA. That's where I draw the line.
