This book gives you a lot of pointers about operating a business in general and also some particular details about operating a bakery.

I wish that there would have been a section listing wholesale suppliers of baking ingredients though, and also more information by STATE as far as licences needed, etc. The book leaves you with a lot more research to do, but it's a good starting point if you're clueless like me ;)

This book is one of the best books to have around for guidance. I read it in my bakery merchandising class and it was very easy to read and it was very easy to understand. I'm hoping to open a bakery someday and this book gives off some good advice for those who are interested in opening their own business.

Another very detailed book about opening a food business. This one is specifically about owning a bakery, but most of it applies to opening a fromagerie, too. An excellent, comprehensive reference.
