Various is the correct author for any book with multiple unknown authors, and is acceptable for books with multiple known authors, especially if not all are known or the list is very long (over 50).
If an editor is known, however, Various is not necessary. List the name of the editor as the primary author (with role "editor"). Contributing authors' names follow it.

A collection of thoughts and philosophical writings by Adi Shankaracharya, one of the primary philosopher sages of India. He was the one to develop advaita philosophy to its fullest. The book is a summary of his advaitic thoughts.
Shankara managed to reform the religion, develop the philosophy and most significantly realise brahman in his short life spanning only 32 years. People considered him to be an incarnation of Lord Shiva himself even during his lifetime.
This book, which is a summary of his many works is a good starting point. Might one suggest a strategy of reading, re reading followed by regular contemplation.
