Various is the correct author for any book with multiple unknown authors, and is acceptable for books with multiple known authors, especially if not all are known or the list is very long (over 50).
If an editor is known, however, Various is not necessary. List the name of the editor as the primary author (with role "editor"). Contributing authors' names follow it.

10 tales of the supernatural all set around Christmas. The stories were good, written by some well known authors. The stories are varied in their subjects except being set around the festive season. All worthy stories in their own rights, I particularly enjoyed The Ghost of Christmas Shopping.
This was another fantastic collection of winter / festive tales with some great, well known children's authors. We have a spooky fishing expedition, a sinister manor house, a haunted football from WWI, a creepy lady in blue, a mummy in a museum, a Russian poem, a supermarket ghost, a little boy from the past, a wintry woman out for vengeance and an antique haunted doll. The stories were so diverse there truly was something for everyone. Read this with my niece who loved it.
When I bought this book , I did not realise it was a book for younger readers. Perhaps teenage readers.(It did not make the age group clear) However, I am very glad I read this book. The stories have a Christmas Season theme to them. I had some favourites among the stories. 'The Knock at the Door'-a ghostly tale of Cornwall. 'No Man's Land', a tale of a ghostly football match caused by a young boy's disappointment with a Christmas Gift and a poem 'Babushka',these were my own personal favourites. If you were looking for a Christmas gift for a teenager , I would recommend this book. It is a quick and easy read and the stories were great.
