If you like Fairy Tale Retellings that lean towards High Fantasy... kings, queens, princes, princesses - epic adventure, I suggest:

Books of Bayern
The Goose Girl (The Books of Bayern #1) by Shannon Hale Enna Burning (The Books of Bayern, #2) by Shannon Hale River Secrets (The Books of Bayern, #3) by Shannon Hale Forest Born by Shannon Hale
This series has strong protagonists, even stronger antagonists, and an exciting plot that will keep you reading into the night.

Did you love Books of Bayern? Try these next:

The Queen's Thief*
The Thief (The Queen's Thief, #1) by Megan Whalen Turner The Queen of Attolia (The Queen's Thief, #2) by Megan Whalen Turner The King of Attolia (The Queen's Thief, #3) by Megan Whalen Turner A Conspiracy of Kings (The Queen's Thief, #4) by Megan Whalen Turner
In the Queen's Thief, beginning with the huge twist at the end of The Thief, this series' plot is extremely unpredictable, the characters show an immense level of complexity, and the writing is superb. STRONGLY RECOMMENDED FOR SHANNON HALE FANS, AND ALL FANTASY LOVERS.

*Please note that this this series is still in the process of being finished.

----

On the other hand, if you like very unique fairy-tale retellings, ones that are original while still showing similarity to the original fairy tale, I suggest:

The Lunar Chronicles*
Glitches (Lunar Chronicles, #0.5) by Marissa Meyer Cinder (Lunar Chronicles, #1) by Marissa Meyer The Queen's Army (Lunar Chronicles, #1.5) by Marissa Meyer Scarlet (Lunar Chronicles, #2) by Marissa Meyer Winter (Lunar Chronicles, #4) by Marissa Meyer Cress (Lunar Chronicles, #3) by Marissa Meyer
Marrissa Meyer gives readers a window into a new, unique, futuristic world where cyborgs, androids, and Lunars alike wander the streets, and the Earth is on the brink of a war.
*Like the Queen's Thief, this series is also in progress.

Jennifer H A fairytale retelling that I read recently and liked a lot is...
Cloaked by Alex Flinn
It has several different tales going on at the same time.
And I've got...
Sisters Red (Fairytale Retellings, #1) by Jackson Pearce
in my TBR list

Kill Me Softly by Sarah Cross

I just finished reading this book and I loved it. Its not really a retelling but it incorporates different fairy tales in it.
