The Realm of the Elderlings by Robin Hobb! It's actually 4 series in the same world with the same characters and is amazing. You start with the Farseer Trilogy, then the Liveship Trilogy, then the Rainwild Chronicles, then the Tawny Man Trilogy, then the Fitz and the Fool series which is currently being released. It's a bit intimidating [most books are around the 1000 page mark] but TOTALLY worth it, they're the best books I've ever read.
I'm definitely adding to the Robin Hobb love, she was one of the first (grown up) fantasy authors I ever read, and I have so much love for her books. Trudi Canavan's Black Magician series is also a big, big favourite of mine, and I recently fell in love with Scott Lynch's Gentleman Bastard books.
The last fantasy book I've read (and liked) was Finnikin of the Rock, from The Lumatere Chronicles, by Melina Marchetta. But I also like Neil Gaiman's books, the Belgariad by David Eddings, The Name of the Wind by Patrick Rothfuss, The Princess Bride by William Goldman and Jonathan Strange and Mr Norrell by Susanna Clarke. I have read the Grisha Trilogy, the Farseer Trilogy, the Liveship Trilogy and the Rainwid Chronicles (but not Fitz and the Fool, yet) and the Gentlemen Bastards, and I liked them too.
I absolutely adore the Gentlemen Bastards series, as well as the Skulduggery Pleasant series by Derek Landy. I cannot recommend the series enough, and even though it's supposed to be a children's series I think it's so much bigger than that :)
