I want to be the first to plunk Opening Moves, Earth's Gambit, and Sacrificial Pieces into the must-read list for Sci-Fi LitRPGs. Nascent has an SF themed virtual game the MC engages with.

I consider all of the VR themed books sci-fi. But I think know what you mean.I was glad to have found this list: LitRPG in space
The list is mixed, some are in the future, some are space themed VR.
Would be an interesting new list, future tech LitRPG, excluding VR. I know there are a few using nano-machines for stat upgrades.
Stork tower by Tony Corden starts as a straight fantasy and transitions into a blend of sci-fi with a couple of the worlds.
Phantom Server series by Andrei Livadny is one of my favorite (if not The Favorite) Russian LitRPG.
Nova Online books by Alex Knight are quite a fun read.
Space Knight by Michael-Scott Earle is decent, although that is an unpopular opinion with his fanbase.
Office Wars by James Patton is a super fun read and it's sci-fi adjacent.
The Station Core series by Jonathan Brooks is a sci-fi take of the dungeon core narrative.
Book 4 of the Crystal Shards by Rick Scott is all sci-fi
Hidden Wishes by Tao Wong is urban sci-fi
Save Point series by Matthew Siege
Armored Souls series by Haxier P. Hunter is a mech sci-fi awesomeness
The Laboratory by Skylar Grant is a weird sci-fi take on the dungeon core.
Emerilia turns into Sci-Fi at about book 4 or so, but I'm not a big proponent of the series.

Both Awaken Online and to a lesser extent Viridian Gate have sci fi elements, though the game world is a fantasy setting, the real world (which in AO is an important plot point) is at least near future tech level.
Earth Force by Shemer Kuznits. 2 books in this series.Drafted: Proxy War by Adam Sampson. Recent and very good.
Life in the North and the other System Apocalypse books are all sci-fi (post-apocalypse sci-fi, but still sci-fi).

I'm curious why nobody mentioned Perimeter Defense series (Sector Eight) by Michael Atamanov - this is pure SF litrpg, and personaly one of my favourites.
Perimeter Defense is arguably a horrible series.
It's probably the most misogynistic of all the Russian translated litrpgs so far, the plot doesn't make much sense in the latter books and the plot armor on the main character might as well be from Warhammer 40,000.

(shrugs) my issue with Perimeter Defense is what happened at the end of book 2. I REALLY don't like the "let's undo almost everything the characters did" trope. When a series does that, I will probably drop it just like that, which is exactly what I did with Perimeter Defense.
I like the red mage series by Xander Boyce. Has sci-fi, post apocalypse, an interesting magic system, and decent characters. Only 2 books, but it seems to be shaking up nicely. It's very loose as litrpg, but it has dungeons and a leveling system for the magic.
I would recommend looking into translated Asian web-novels via webnovel.com, boxnovel.com and novelupdates.com. My favorites are The Legendary Mechanic and Scholar's Advanced Technological System.
but srsly, it is good if you havent read it; Legendary mechanic, it's translated from chinese, but it's good. There are other websites with more chapters, but... the translation isn't too good, so i just reccomended this site to read it on, gg

There is a real lack of them as published books.
But there are a few at the Royal Road website that are free to read. I honestly got lost on that website for months on end reading the web fictions that are there. Quite a few end up getting published.
