I'm guessing it's because the Redwall characters tend to be wildlife. Squire Julian Gingivere in the first book was apparently a domestic cat living in a human-owned barn, but at that time Brian Jacques was still developing the world and its rules (which accounts for the horse and cart as well; he hadn't decided yet that humans did not exist at all in Redwall). Later on it's implied that Julian is a descendent of Gingivere the wildcat. All the other felines in Redwall like Tsarmina, Riggu Felis and Ungatt Trunn are supposed to be European wildcats, though in illustrations they do resemble regular tabby cats.If there were domestic dogs in Redwall, I have a feeling they would be good since the one domestic cat was good as opposed to the wildcats (and dogs' wild counterparts the foxes) who were classed as vermin.
