We actually read that one sometime last year! It was in the early-ish days of COVID, if I remember correctly, so it kinda got overshadowed lol

I want to suggest Herland by Charlotte Perkins Gilman. It's a utopian novel from 1915 that looks at a society made up entirely of women, who also happen to be vegetarian! It's been on my list for a long time.

Another book I've been thinking about is My Year of Meats. I read it over the summer - there are vegan (or maybe it was vegetarian) characters, and it deals with the beef industry.

it's been on my list for the longest time and it's really short - I don't know why I haven't read it yet!

Herland sounds good. I've read The Yellow Wallpaper so would be keen to read more of Charlotte Perkins Gilman's work.
