I did a little searching since I know I read an Eros and Psyche retelling that I dnfed. It's called Soul in Darkness and I personally didn't enjoy it since the story wasn't as well developed as it could've been and I wasn't a fan of Psyche's character. But maybe someone else has a different opinion so I just wanted to add this in in case someone wanted to discuss it. Feel free to say any dissenting opinions (respectfully please) since this is a space where we can freely chat without any animosity.
Okay, so! The sequel to Deal with the Elf King: A Dance with the Fae Prince by Elise KovaThen, of course, the classic: Till We Have Faces: A Myth Retold by C.S. Lewis
Soul in Darkness by Wendy Higgins is an adult paranormal romance take.
Painted Blind by Michelle A. Hansen is a modern YA retelling with some great reviews.
Eros by Helen Harper is a romantic adult contemporary retelling.
I need to read some of these...

Till We Have Faces is one of my favourite books! Soo good!
@Ella, it has been on my list for ages! I struggle with that one and the Orpheus/Euridice myth because sometimes the endings are SO sad!!

Oh no. Sad retelling alert. I need to stay as far away as possible or end up a sad puddle on the floor.

Oh, I'll get to it, for sure. You don't skip over a classic like Lewis! I just have to gear myself up...for floor-puddle-times. 😂
I just read Souls and Sorrows by Sav R Miller. It's a dark romance contemporary retelling (and when they say dark, they mean it, though this might be tamer than the other books in the series). There's also Electric Idol by Katee Robert, where he is a hit man for Aphrodite and she is a plus sized influencer (one of my favorites). Also dark romance, but not as much.
Eros by Carly Spade, more of a sweet contemporary romance. And the Loch Ness Monster makes an appearance.
And of course the new Psyche and Eros by Luna McNamara, but I haven't read that one yet.
