Having experimented with every type of quota you mentioned, I've found that writing for a set amount of time works best for me. My writing goal is four hours per day.
On a good day I'll do 2000 words, but I've exceeded 10,000 during a few "overtime" sessions.
Drawing up a daily work schedule has helped my productivity. Many writers say (and I can vouch for this) that the single most vital productivity-boosting skill is learning to separate drafting and editing. They're two different processes that require two opposing mindsets. Trying to do both at once is exhausting and takes much more time than writing a draft from start to finish and then editing it.

A professional writer shouldn't need inspiration to write a book any more than a professional carpenter needs inspiration to build a chair. That said, sometimes inspiration does drop in for a visit, and I try my best to be a welcoming host.
