If I am being honest, I think that whatever cookie I am currently making or eating is my favorite! But, if I could only pick one cookie, it would be the Pan-banging Chocolate Chip. Or the Brown Sugar Cookies. (Or the Oatmeal Raisin.)

'Pan-banging' is a technique I came up with where after baking the cookies for an alotted time, the pan is then tapped in the oven every few minutes, creating ripples on the edge of the cookie. This creates two textures in the cookie: a crisp outer edge, and a soft, gooey center.
