My current project is a historical fantasy loosely based on the English Reformation. I adore learning about that time period, and I've been wanting to write a book about it for years.

I make mental lists of all the tropes, devices, and subjects that I enjoy reading and then throw them together. Sometimes the result is weird, but sometimes the result is a series of books that spans twenty years and five volumes.

I write character exercises. There are lots of bits and pieces of world building that I never got to put into my series, and a character exercise allows me to explore my own fictional universe, experiment with voice, and keep writing. I've written short stories from multiple side characters' perspectives.

I recently finished Magic Lessons by Alice Hoffman, and I have to say, that's one of the best fantasies I've ever read. I was engrossed from the first page until the last.
