That is a tough one as there are so many. But one of them that most people should know is Han Solo and Leia Organa. And I am only speaking of the first three movies that George Lucas created and the many novels that came after (I don't like Disney's new path with the characters). As for why, a couple that would seem to be complete opposites that eventually fall in love and really make it work. Leia the adopted princess, raised as royalty, then a senator of her planet.
By contrast, Han was in the Imperial Navy until he saved Chewbacca which ended his career. Then went on to be a smuggler and trying to stay out of Imperial hands. He puts up a front to protect his true self, the self that saved Chewbacca. But in time, his true heart is what Leia sees and falls in love with.
The twists of these two characters always make for an interesting story.

In general, I don't have this issue. Many authors debate "writer's block". Some feel it is just a excuse. Others think it is a real problem. I am in the middle. I believe it can be a real problem, but one you can work through. Although, it is difficult. But if writing were easy, everyone would do it. How I work through a problem is get away from the book for a short period. Often this means work on another project, or it can mean go do something totally different.
You never know what might give you the inspiration to fill in the hole you have been stuck with. My suggestion is to make a lot of notes on the problem and get away from it for a while. The solution will come. Just don't give up. Tell yourself "I CAN fix this!" Because you can, it might not be that second, but you can and will get there.

It varies. I get ideas at any time of day or night. You never know when inspiration will strike, therefore it is always important to keep a notebook or tablet with you at all times. I know with some authors, they only believe good ideas will stay with them. For me they can strike in one instant and gone the next. I may not use that idea right away, but rather let it sit awhile and think on it, let it grow and develop.
Other times it is so strong I just have to go with the flow until it ebbs. That can result into a finished novel. Several times what I thought was going to be a short story, turned into a 70,000 word novel when I was done.
