But probably two-thirds have picked this custardy, cheese-crusted casserole as one of their sides. 1 cup macaroni 3 large eggs 2 cups whole milk 1/2 teaspoon freshly ground white pepper 2 tablespoons butter, melted 1/2 teaspoon salt 1 teaspoon hot sauce 2 cups grated extra-sharp cheddar cheese Paprika Preheat the oven to 350 degrees F. Butter an 8-inch square baking dish. Bring a pot of salted water to a boil. Add the macaroni, stir well, and simmer for 10 minutes. Pour into colander and rinse. Drain until almost dry. In a medium bowl, beat the eggs until light yellow. Add the milk, white pepper, butter, salt, and hot sauce and mix well. Put a layer of cooked macaroni in the prepared baking dish. Add a layer of the egg mixture, then a layer of the cheese. Repeat the layers, ending with cheese on top. Dust with paprika. Bake for 35–40 minutes, or until the custard is set. Serve hot.”
