I am not a chef. I do, however, love to cook, and for years my friends and family have encouraged me to write this book. While the idea always sounded glamorous and enticing, in the back of my mind I knew the work it would take to write what I would consider to be the perfect cookbook, and the task was
daunting at best.

The world is full of great cookbooks written by talented and well-trained chefs who have dedicated their lives to their craft, and I must admit I’ve bought more than my fair share of them in my lifetime. With each new cookbook I buy, what inevitably follows is several weeks of trying all the dishes that caught my eye in the first place – and every once in a while, something I stumble upon will end up in my own repertoire of fa I am not a chef. The world is full of great cookbooks written by talented and well-trained chefs who have dedicated their lives to their craft, and I must admit I’ve bought more than my fair share of them in my lifetime. With each new cookbook I buy, what inevitably follows is several weeks of trying all the dishes that caught my eye in the first place – and every once in a while, something I stumble upon will end up in my own repertoire of favorite dishes I like to make. Yet, even with my ever-growing collection of cookbooks, I find that I most often end up searching my own recipe box for the tried-and-tested dishes I love to cook and eat.

In compiling this collection, a common theme often occurs. While I’m a great fan of fresh, organic and locally-produced foods and, whenever possible use them, it’s also not always realistic or affordable to buy these. It’s far too easy in my opinion for a dish to become pretentious, over-complicated or just plain cost-prohibitive by adhering to a set of steadfast rules in a recipe. Experiment with different ingredients, home cooking should be easy and fun!

Throughout this book I often include sources and substitutions for hard-to-find ingredients, and cheaper alternatives to items that may not fit your budget. Many of the ingredients, equipment and appliances mentioned in this book are available at www.cookingwithkboy.com on the Web.

Remember, except for baking and candy-making, cooking is more of a process you adapt to your own taste rather than a recipe you follow – don’t be afraid to experiment to suit your own tastes! For example, if a recipe calls for peas, don’t be afraid to substitute an equal amount of any vegetable you prefer, or even leave it out altogether. Make food you like to eat and above all else, keep your time in the kitchen fun and enjoyable.
